MAUI, HAWAII — Despite its rich soil and tropical, year-round growing season, Hawaii actually imports about 90 percent of its food. To promote a growing trend toward locavorism, the Maui County Farm Bureau has hosted its Maui County Ag Festival for the past eight years.
For the fourth time, I was lucky enough to be invited as a guest judge for the event by the Maui Visitors Bureau.

,%20who%20worked%20with%20Michael%20Mina%20in%20San%20Francisco%20for%20years.%3C/p%3E%3Cp%3ETeam%20Green%20busy%20at%20work%20at%20the%20live%20cook-off.%3C/p%3E%3Cp%3EChef%20Isaac%20Bancaco%20plating%20his%20dish.%3C/p%3E%3Cp%3EA%20close-up%20of%20his%20hamachi%20crudo%20dish%20with%20strawberries.%3C/p%3E%3Cp%3EChef%20Oscar%20Torres%20cooking%20up%20a%20storm.%3C/p%3E%3Cp%3EThis%20year,%20it%20also%20included%20three%20chefs%20from%20the%20mainland:%20Oscar%20Torres%20of%20Acabar%20in%20Los%20Angeles;%20Seakyeong%20Kim%20of%20Charlie%20Palmer%20at%20Bloomingdale%E2%80%99s%20in%20Costa%20Mesa;%20and%20Richie%20Nakano,%20late%20of%20Hapa%20Ramen%20in%20San%20Francisco,%20who%20enjoyed%20some%20tropical%20tranquility%20with%20his%20family%20here%20after%20his%20recent%20controversial%20jettison%20from%20the%20establishment%20he%20founded.%3C/p%3E%3Cp%3EChef%20Seakyeong%20Kim%E2%80%99s%20duck%20with%20duck%20liver%20and%20trumpet%20mushrooms.%3C/p%3E%3Cp%3EChef%20Sheldon%20Simeon%E2%80%99s%20hamachi%20dish.%3C/p%3E%3Cp%3EYes,%20that%20is%20a%20hot%20dog%20octopus%20attacking%20a%20prawn%20and%20noodles.%20It%20is%20the%20creation%20of%20Chef%20Jake%20Belmonte,%20instructor%20at%20the%20Maui%20Culinary%20Academy.%3C/p%3E%3Cp%3EThe%20visiting%20chefs%20and%20local%20chefs%20participated%20in%20the%20live%20cook-off,%20where%20three%20teams%20of%20four%20chefs%20had%20to%20cook%20in%20tight%20quarters%20in%20front%20of%20a%20crowd.%20Each%20team%20had%20only%2030%20minutes%20to%20make%20three%20dishes,%20using%20a%20pre-selected%20pantry%20of%20local%20ingredients.%3C/p%3E%3Cp%3EAs%20each%20dish%20was%20finished,%20my%20fellow%20three%20judges%20and%20I%20would%20have%20to%20dash%20into%20the%20cooking%20area%20to%20immediately%20taste%20and%20score%20the%20dish.%20Toward%20the%20end,%20the%20dishes%20were%20coming%20out%20in%20such%20a%20flurry,%20that%20at%20one%20point%20we%20were%20told%20we%20had%20all%20of%20six%20minutes%20to%20finish%20tasting%20the%20remaining%20nine%20dishes.%20Talk%20about%20chewing%20fast.%3C/p%3E%3Cp%3EIn%20the%20end,%20the%20Green%20Team%20of%20Simeon,%20Lofaro,%20Scheer%20and%20Torres%20emerged%20victorious.%3C/p%3E%3Cp%3EWhile%20only%20the%20judges%20had%20the%20chance%20to%20sample%20those%20dishes,%20the%20public%20got%20in%20on%20the%20act%20a%20few%20hours%20later%20for%20the%20Grand%20Taste,%20in%20which%2012%20chefs%20set%20up%20stations%20to%20create%20tasty%20morsels%20featuring%20a%20specific%20product%20raised%20by%20a%20local%20farm.%3C/p%3E%3Cp%3EA%20little%20liquid%20nitrogen%20action%20by%20Chef%20Michael%20Lofaro,%20with%20assistance%20from%20Chef%20Oscar%20Torres.%3C/p%3E%3Cp%3EThe%20resulting%20radish%20sorbet%20and%20Surfing%20Goat%20Dairy%20goat%20cheese%20cornet%20%E2%80%94%20one%20of%20my%20fave%20dishes%20at%20the%20Grand%20Taste.%3C/p%3E%3Cp%3EThe%20piece%20de%20resistance%20on%20the%20grill%20at%20Three%E2%80%99s%20Restaurant%E2%80%99s%20station.%3C/p%3E%3Cp%3EThree%E2%80%99s%20Restaurant%E2%80%99s%20pork%20belly%20on%20chilled%20polenta%20with%20Maui%20sweet%20onion%20and%20li%20hing%20mui%20jam.%3C/p%3E%3Cp%3EYours%20truly%20was%20a%20judge%20for%20that,%20too.%20The%20public%20also%20had%20a%20chance%20to%20vote%20for%20%E2%80%9CFan%20Favorite.%E2%80%9D%3C/p%3E%3Cp%3EScheer%E2%80%99s%20panisse%20with%20pepperoni%20and%20pickled%20onions.%3C/p%3E%3Cp%3EHula%20Grill%E2%80%99s%20fancy%20take%20on%20a%20musubi.%3C/p%3E%3Cp%3EBoncaco%E2%80%99s%20fried%20breadfruit.%3C/p%3E%3Cp%3EWhen%20all%20the%20votes%20were%20tallied,%20these%20were%20the%20winners:%3C/p%3E%3Cp%3EScheer%20for%20%E2%80%9CFan%20Favorite%E2%80%9D%20for%20his%20dish%20of%20panisse%20topped%20with%20200-day%20cured%20pepperoni%20made%20from%20Beef%20&%20Blooms%20beef.%3C/p%3E%3Cp%3EScheer%20again%20for%20%E2%80%9CBest%20Overall%20by%20the%20Judges%E2%80%9D%3C/p%3E%3Cp%3ECharlie%20Owen%20of%20Hula%20Grill%20Kaanapali%20for%20%E2%80%9CBest%20Use%20of%20Proteins%E2%80%9D%20for%20Kurobuta%20pork%20musubi%20atop%20bamboo%20sticky%20rice%20with%20pork%20from%20Malama%20Farm.%3C/p%3E%3Cp%3EBoncacao%20for%20%E2%80%9CBest%20Veggie%20Dish%E2%80%9D%20for%20%E2%80%9CUlu%20Popocorn%20&%20Opelu%E2%80%9D%20made%20with%20taro%20and%20breadfruit%20from%20Nohoana%20Farms.%3C/p%3E%3Cp%3ELofaro%20for%20%E2%80%9CHonorable%20Mention%E2%80%9D%20for%20Surfing%20Goat%20Dairy%20goat%20cheese%20cornets%20with%20radish%20sorbet,%20fennel%20pollen%20and%20ginger.%3C/p%3E%3Cp%3EThe%20chefs,%20judges%20and%20organizers%20of%20the%20festival%20after%20the%20awards%20ceremony.%3C/p%3E%3Cp%3EMore:%20A%20Taste%20of%20Paradise%20on%20Maui%3C/p%3E%3Cp%3EShare%20and%20Enjoy%3C/p%3E){kind=link}
