Tarheel Pie

Looky, looky what I found. A chocolate pie that bears the name of my state. Coincidence. . . . . I think not. It’s fate baby. Earlier this month I blogged about the nickname the state of North Carolina carries, The Tarheel State and the “legends” and reasons behind that naming. One of them being the pine forests and large quantities of tar products that have been produced here. Hence, this pie, the thick, dark filling is much like its name source. It is like a thick dark chocolate rich brownie and one small slice at a time will do!

This makes one 9 inch deep dish pie (8 regular slices, but cut them again, this is rich, so 16 servings).

  1. Preheat oven to 350 degrees. In a large bowl, pour melted butter over 3/4 cup chocolate chips. Stir until all the chips are melted and it is smooth. In a separate bowl mix together flour, brown sugar and white sugar. Stir this mixture into the butter/chocolate mixture. Mix well. Stir in the eggs and the vanilla. Fold in the pecans, coconut and the 1/4 cup chocolate chips. Pour into pie crust.
  2. Bake 40 minutes. Check to see if it is set. May need to bake another 5 minutes. Top should be set and may crack slightly. Do not overbake. It is better if under-baked slightly.
