Ingredientes

  • 1 head green cabbage, Minced
  • 1 lb Green tomatoes, minced
  • 1 lb Ripe tomatoes, minced
  • 1 1/2 c. Cauliflower florets, (up to 2)
  • 1 lrg Green bell pepper (capsicum), seeded and minced
  • 2 tsp Crushed Dry Red Pepper Flakes
  • 1 c. Dark brown sugar, packed
  • 2 x Onions, Minced
  • 1 x Clove garlic, chopped
  • 1/2 c. Corn kernels
  • 1 1/2 tsp Grnd ginger
  • 3/4 tsp Grnd cinnamon
  • 3/4 tsp Grnd cloves
  • 1 Tbsp. Grnd turmeric
  • 3/4 tsp Curry pwdr
  • 3/4 tsp Celery seed
  • 1 1/2 tsp Coarse salt
  • 1 Tbsp. Cornstarch
  • 1 Tbsp. Dry mustard
  • 1 c. Cider vinegar

  1. Chow-chow is a vegetable relish which is put up at harvest time when an excess of vegetables is on hand. The word is thought to stem from the Chinese who came over to work on the railroads and may be a derivation of the word choy, that is Cantonese for vegetables. Combine all the ingredients from the cabbage through the salt in a large heavy pot or possibly dutch oven.
  2. Mix the cornstarch with the mustard and vinegar in a bowl till smooth. Add in to vegetable mix. Heat to boiling, reduce the heat and simmer, uncovered, stirring frequently, for 1 hour. Pour into sterilized jars and seal. Store in a cold place.
  3. Yield: 4 pints
