Ingredientes

  • 3 pound beef boneless round steak, cut into 1 inch cubes
  • 1 lg. onion, finely minced (about 1 c.)
  • 4 cloves garlic, finely minced
  • 1/4 c. oil
  • 2 c. tomato puree
  • 2 to 3 tbsp. grnd red chiles
  • 1 teaspoon cumin seed, grnd
  • 1 teaspoon grnd coriander
  • 2 Anaheim chiles, seeded and minced
  • 4 Jalepeno chiles, seeded and minced
  • Shredded Cheddar cheese
  • Flour tortillas
  • Cooked pinto beans

Direcciones

  1. Cook and stir beef, onion and garlic in oil in 4 qt Dutch oven till beef is brown. Stir in remaining ingredients except cheese, tortilla, and beans. Heat to boiling. Reduce heat, cover and simmer, stirring occasionally, till beef is tender, about 2 hrs. Serve with cheese, tortillas, and beans. Makes 6 servings.
