%20and%20baguette.%20Also,%20my%20broiler%20doesn't%20work,%20never%20has,%20so%20since%20Ginny%20brought%20her%20torch%20for%20the%20Creme%20Brulee%20that%20I'll%20be%20posting%20later,%20we%20used%20that%20to%20work%20the%20cheese%20over.%3C/p%3E%3Cp%3EIsn't%20today%20the%20perfect%20day%20for%20soup?%20I%20thought%20so,%20too.%20While%20I%20was%20running%20errands%20over%20lunch%20yesterday,%20in%20the%20rain,%20I%20couldn't%20help%20but%20think,%20%22Soup%20Day.%22%20Yep,%20we%20have%20a%20tradition%20in%20my%20office%20(I%20work%20in%20a%20group%20lab%20with%20several%20other%20people)%20that%20when%20we%20all%20start%20to%20get%20chilled%20and%20the%20weather%20is%20getting%20us%20down,%20we%20have%20Soup%20Day.%20Everyone%20brings%20in%20soup,%20or%20something%20to%20go%20with%20soup,%20like%20crackers,%20or%20dessert,%20and%20we%20shake%20off%20the%20chill%20together%20while%20drowning%20our%20sorrows%20in%20a%20bowl%20(or%20six)%20of%20hot,%20steamy%20goodness.%20We%20have%20a%20small%20group%20right%20now,%20but%20it%20couldn't%20have%20been%20a%20better%20day%20for%20it%20as%20we've%20had%20nearly%20three%20inches%20of%20rain%20over%20the%20last%2048%20hours,%20and%20on%20top%20of%20that....its%20Friday.%20So%20today%20I%20have%20a%20big%20crock%20pot%20of%20Pasta%20e%20Fagioli,%20and%20some%20impromptu%20Chicken%20Noodle%20soup%20(I%20snagged%20a%20couple%20of%20pieces%20of%20leftover%20grilled%20chicken%20from%20our%20office%20cookout%20yesterday).%3C/p%3E%3Cp%3ESoup's%20On,%20Everyone!%3C/p%3E%3Cp%3EFrench%20Onion%20Soup%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EMelt%20the%20stick%20of%20butter%20in%20a%20large%20pot%20over%20medium%20heat.Add%20the%20onions,%20garlic,%20bay%20leaves,%20thyme,%20and%20salt%20and%20pepper%20and%20cook%20until%20the%20onions%20are%20very%20soft%20and%20caramelized,%20about%2025%20minutes.%20Add%20the%20wine,%20bring%20to%20a%20boil,%20reduce%20the%20heat%20and%20simmer%20until%20the%20wine%20has%20evaporated%20and%20the%20onions%20are%20dry,%20about%205%20minutes.%20Discard%20the%20bay%20leaves%20and%20thyme%20sprigs.%20Dust%20the%20onions%20with%20the%20flour%20and%20give%20them%20a%20stir.%20Turn%20the%20heat%20down%20to%20medium%20low%20so%20the%20flour%20doesn't%20burn,%20and%20cook%20for%2010%20minutes%20to%20cook%20out%20the%20raw%20flour%20taste.%20Now%20add%20the%20beef%20broth,%20bring%20the%20soup%20back%20to%20a%20simmer,%20and%20cook%20for%2010%20minutes.%20Season,%20to%20taste,%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EWhen%20you're%20ready%20to%20eat,%20preheat%20the%20broiler.%20Arrange%20the%20baguette%20slices%20on%20a%20baking%20sheet%20in%20a%20single%20layer.Sprinkle%20the%20slices%20with%20the%20Gruyere%20and%20broil%20until%20bubbly%20and%20golden%20brown,%203%20to%205%20minutes.%3C/p%3E%3Cp%3ELadle%20the%20soup%20in%20bowls%20and%20float%20several%20of%20the%20Gruyere%20croutons%20on%20top.Alternative%20method:%20Ladle%20the%20soup%20into%20bowls,%20top%20each%20with%202%20slices%20of%20bread%20and%20top%20with%20cheese.%20Put%20the%20bowls%20into%20the%20oven%20to%20toast%20the%20bread%20and%20melt%20the%20cheese.%3C/p%3E){kind=link}
