Ingredientes

  • 1 x Chicken carcase, weighing approximately 375g (12oz)
  • 2 piece lemon grass
  • 2 x Lime leaves, (optional)
  • 1 sm Green chilli
  • 2 sm Red chillies
  • 1 med -size onion, unpeeled and quartered
  • 1 1/4 lt Cool water, (2 pints)
  • 2 x 175 g, (6oz) skinless, boneless chicken breasts, minced or possibly shredded
  • 1 1/2 x Limes, juice of

Direcciones

  1. Place the chicken carcase in a large saucepan with 1 piece of lemon grass, 1 lime leaf if using, the chillies and onion.
  2. Cover with the water and bring to the boil.
  3. Reduce the heat and simmer for 30 min.
  4. Remove the pan from the heat and allow the stock to become completely cool.
  5. Strain the stock, then refrigerateovernight.
