.%3C/p%3E%3Cp%3EI%20also%20thought%20I'd%20cook%20something%20my%20friend%20Helen%20might%20like.%20Because%20you%20see%20I%20have%20a%20plan!%20Between%20FoodBuzz%20Project%20Food%20Blog,%20the%20holidays,%20FoodBuzz%20Festival%20and%20all%20my%20regular%20duties%20both%20here%20and%20at%20home,%20I%20have%20been%20as%20busy%20as%20I%20have%20ever%20been%20in%20my%20entire%20life.%20Now%20I%20know%20I%20tend%20toward%20broad,%20all-encompassing%20statements.%20But%20really.%20Things%20have%20just%20been%20madness%20lately.%20I%20need%20a%20bit%20of%20help%20around%20here.%3C/p%3E%3Cp%3ESo,%20by%20cooking%20something%20that%20Helen%20might%20like%E2%80%93%20I%20figured%20she%20might%20be%20just%20the%20friend%20I%20need%20to%20lighten%20my%20editorial%20load%20just%20a%20tad.%20Because%20I%20know%20Helen,%20so%20I%20know%20that%20whatever%20Helen%20eats%20she%20prefers%20to%20pick%20the%20wine%20to%20go%20with%20it%20too.%20I%20have%20a%20wine%20fridge%20full%20of%20wines%20waiting%20be%20tasted%20and%20evaluated.%20See%20where%20I%20am%20going%20with%20this?%20With%20Helen%20on%20the%20wine,%20that's%20one%20less%20thing%20for%20me%20to%20do.%3C/p%3E%3Cp%3EShe%20rummaged%20around%20and%20chose%202006%20Hall%20Napa%20Valley%20Merlot.%20It's%20a%20bottle%20that's%20been%20in%20my%20wine%20fridge%20for%20a%20few%20months,%20waiting%20for%20its%20moment%20to%20come%20forward.%20I%20was%20given%20this%20wine%20at%20an%20event%20benefiting%20Gulf%20Restoration,%20called%20LA%20Helps%20LA%20(Los%20Angeles%20Helps%20Louisiana).%20Hosted%20by%20Gisele%20Perez%20of%20Small%20Pleasures%20Catering.%20I%20tasted%20it%20at%20the%20event%20and%20was%20very%20impressed.%20So%20I%20knew%20it%20was%20a%20bottle%20that%20would%20appeal%20to%20Helen.%3C/p%3E%3Cp%3ENow%20in%20case%20you%20don't%20know%20Hall%20Napa%20Valley,%20it's%20a%20great%20Napa%20label.%20They%20are%20California's%20first%20LEED%20Gold%20Certified%20Winery,%20and%20they%20practice%20sustainable%20organic%20farming.%20But%20they%20are%20serious%20winemakers%20with%20a%20growing%20list%20of%20wines%20with%20ratings%20at%2090+.%20Including%20the%2094%20rated%202006%20HALL%20Napa%20Valley%20Cabernet%20Sauvignon.%20Which%20James%20Laube%20of%20the%20Wine%20Spectator%20Insider%20called,%20%22A%20rich,%20dense,%20concentrated%20style,%20this%20is%20full-bodied,%20focused%20and%20pure,%20with%20hints%20of%20mocha%20and%20black%20licorice%20rounding%20out%20the%20core%20currant,%20plum%20and%20black%20cherry%20flavors.%20Focused%20and%20persistent,%20with%20a%20long%20finish.%22%3C/p%3E%3Cp%3EHmmm.%20I%20have%20some%20of%20that%20wine%20too.%20But%20like%20I%20said,%20Helen%20was%20choosing%E2%80%93%20and%20she's%20much%20more%20of%20a%20Merlot%20girl.%20A%20very%20discriminating%20Merlot%20girl.%20So%20rid%20your%20mind%20of%20any%20of%20the%20stereotypes%20you%20think%20define%20Merlot.%20Because%20when%20Helen%20talks%20about%20the%20wines%20she%20loves,%20you%20can't%20help%20but%20pay%20attention.%20She%20has%20a%20certain%20style...%3C/p%3E%3Cp%3EThis%20is%20a%20serious%20wine.%20%20It%20has%20balance,%20structure%20and%20sophistication%20a%20million%20miles%20removed%20from%20the%20%E2%80%9CSideways%E2%80%9D%20stigma.%20Ms.%20Merlot%20Hall%20has%20taken%20off%20her%20glasses,%20let%20down%20her%20hair%20and%20declared%20herself%20every%20bit%20as%20sexy%20as%20Lady%20Pinot.%3C/p%3E%3Cp%3ETake%20a%20walk%20to%20the%20wild%20edge%20of%20a%20country%20garden;%20pass%20the%20gently%20rained%20on%20woodpile,%20inhale%20the%20violets,%20find%20the%20dark%20fruit%20dripping%20from%20the%20brambles%20and%20dive%20into%20its%20vibrant%20red/purple%20hues.%20Bright%20red%20fruit%20flavors%20add%20a%20zesty%20note%20of%20interest%20to%20the%20rich%20taste%20of%20black%20forest%20gateau.%3C/p%3E%3Cp%3EEnjoy%20with%20Penne%20Eggplant%20Mozzarella%20in%20a%20Rich%20Tomato%20Sauce,%20Coconut%20Milk%20Veggie%20Curries,%20a%20Veggie%20Burrrito%20with%20Rice,%20Beans%20&%20Roasted%20Corn,%20or%20a%20side%20of%20Guacamole.%20What?%20I%20am%20a%20vegetarian!-%20HELEN%20MELVILLE%3C/p%3E%3Cp%3EIt's%20true%20she's%20a%20vegetarian.%20So%20not%20only%20did%20I%20let%20her%20pick%20the%20wine,%20but%20I%20followed%20her%20cues%20on%20the%20food%20as%20well.%20So%20today%20I%20have%20just%20the%20thing%20to%20make%20her%20happy.%20It's%20a%20Vegetarian%20Coconut%20Curry%20with%20Tofu.%20It%20was%20designed%20to%20compliment%20the%20Hall%20Napa%20Valley%20Merlot.%20But%20it%20has%20other%20advantages%20that%20I%20knew%20would%20appeal%20to%20Helen%20as%20well.%20Because%20this%20coconut%20curry%20recipe%20is%20very%20delicious%20plus%20simple%20to%20make.%20In%20my%20opinion%20a%20lot%20of%20vegetarian%20curries%20tend%20to%20be%20rather%20bland%20and%20tasteless,%20but%20not%20this%20one!%20Made%20with%20tofu%20and%20lots%20of%20fresh%20vegetables.%20Besides%20being%20delicious,%20this%20dish%20is%20vegetarian,%20vegan,%20and%20gluten-free%20(if%20you%20choose%20your%20soy%20sauce%20well)%E2%80%93%20great%20for%20anyone%20who%20wants%20to%20eat%20something%20healthy%20and%20nutritious%20without%20sacrificing%20taste.%3C/p%3E%3Cp%3ESo%20pour%20the%20Merlot%20and%20have%20some%20curry.%20It%20may%20seem%20like%20an%20unsuual%20pairing,%20and%20you%20might%20want%20to%20take%20a%20light%20hand%20on%20the%20chili.%20But%20you%20gotta%20admit,%20it's%20fun...%20This%20is%20the%20last%20vegan%20meal%20you'll%20see%20from%20Sup!%20until%20the%20new%20year%20commences!%20Break%20out%20the%20holiday%20food.%20Yippee!%3C/p%3E%3Cp%3EHeat%20a%20large%20wok%20over%20medium%20heat.%20Place%20shredded%20coconut%20in%20the%20dry%20wok.%20Stir%20continuously%20until%20the%20coconut%20is%20nicely%20toasted.%20Tip%20toasted%20coconut%20into%20a%20bowl%20to%20cool.%3C/p%3E%3Cp%3EReturn%20the%20wok%20to%20the%20stove.%20Raise%20the%20temperature%20to%20medium-high.%20Add%202%20Tbsp.%20peanut%20oil%20plus%20the%20onion,%20ginger,%20and%20garlic.%20Stir-fry%201-2%20minutes,%20or%20until%20onion%20begins%20to%20soften%20and%20the%20garlic%20is%20fragrant.%3C/p%3E%3Cp%3ETurn%20the%20heat%20to%20high.%20Add%20stock%20plus%20kaffir%20lime%20leaves,%20chili%20sauce,%20and%20most%20of%20the%20toasted%20coconut%20(reserve%201%20to%201+1/2%20Tbsp.%20for%20garnish).%20Stir%20everything%20together.%3C/p%3E%3Cp%3EAdd%20the%20sweet%20potato%20(or%20yam)%20and%20cauliflower.%20Bring%20to%20a%20boil,%20then%20reduce%20heat%20to%20medium.%20Simmer%208-10%20minutes%20until%20the%20vegetables%20begin%20to%20soften.%3C/p%3E%3Cp%3EAdd%20the%20mushrooms,%20and%20tofu,%20stirring%20to%20incorporate.%20Cover%20and%20simmer%202%20more%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20bell%20pepper%20and%20snow%20peas,%20simmer%202-3%20minutes,%20or%20until%20snow%20peas%20have%20softened%20but%20are%20still%20bright%20green.%3C/p%3E%3Cp%3ETurn%20heat%20down%20to%20low%20and%20add%20the%20coconut%20milk%20plus%20the%20soy%20sauce,%20stirring%20to%20dissolve.%20Add%20the%20coconut%20milk%20to%20taste,%20depending%20on%20how%20creamy%20or%20how%20much%20sauce%20you%20want%20with%20your%20curry.%3C/p%3E%3Cp%3ERemove%20from%20heat%20and%20do%20a%20taste-test%20for%20salt%20and%20spice,%20adding%20more%20chili%20paste,%20soy%20sauce%20or%20salt%20as%20needed.%3C/p%3E%3Cp%3ETo%20serve:%20scoop%20the%20curry%20onto%20individual%20plates%20or%20into%20serving%20bowls.%20Top%20with%20fresh%20cilantro%20and%20a%20sprinkling%20of%20the%20reserved%20toasted%20coconut.%20Serve%20jasmine%20or%20brown%20rice%20on%20the%20side.%3C/p%3E){kind=link}
