Receta Thai Glazed Salmon with Brussels Sprouts and Eggplant
Ingredientes
- 2 lbs salmon, portioned in 1/2lb fillets
- 2 cups brussels sprouts, cleaned and halved
- 2 cups eggplant, chopped into about 1/2" chunks
- 1/2 medium red onion, thinly sliced
- 3 T garlic, minced
- 1-2 serrano chiles, thinly sliced, more or less depending on how spicy you want it
- 1 large handful of (Thai if possible) basil leaves, roughly chopped - some extra for garnish
- Olive oil
- Salt
- Pepper
- Sauce:
- 2 T fish sauce
- 2 T soy sauce
- 1 T palm sugar (or brown sugar)
- 3/4 cup water
