Receta Thai grilled squid with green sauce – a guest post by Tes
by sukanya

Food not only nourishes our body but it is a wonderful tonic for our soul too, good food, comfort food, soul food, it goes by many names but a food blog leaves you hungry for more, and hunger is the best sauce ever (by Cervantes) which always brings out the best in you. In my initial days of blogging, I met many talented food bloggers, but remain hooked to few of them, Tes is one such blogger friend of mine whose blog I simply loved , it oozes with so much homely charm, loves the rustic touch in many of her recipes, and amazed at her skill of making homemade pasta.

Please welcome Tes from Thailand who chronicles her life at Tes at Home , which surrounds around food, books, road trips, her husband and her little angel Yaseen, and lives in her cozy nest at Pune. Today she will lead you through the tantalizing alleys of Thailand’s street foods – grilled squids or kalamari in Thai green sauce.

Hello everyone and thanks Sukanya for this wonderful opportunity for allowing me to share my thought here. I got very exciting when Sukanya asked me to do a guest post on her blog. Her blog is like an online recipe library with a lot of fun on the side. I’ve been thinking a lot about what to put on her blog and remembered she told me that she loves Thai food.

If you’ve been in Thailand, street food is quite overwhelming there. There are so many things to choose from starting from beautiful looking dessert to ready-to-eat meals. One of the things you probably see in every street is grilled squid over charcoal served with spicy seafood sauce. It’s not only a popular bite but it’s also one of my favourite bite.

1) Tell us something about you? I’m Tes from Tes At Home. I blog about food, mostly Asian cuisine with strong Thai and Indian influence. I also write about on-road journey in India a lot. We love travel and exploring outdoor. You won’t catch us home on the weekend, coz we always on the move to find new places. I was born in Thailand, but move to India for almost 9 years now. My husband is originally from Kerala but we have our cozy nest here in Pune where we raise our 3 years old Yaseen in this busy city. We love food, in fact I dear saying we are one of the most active foodie families in the world. When it comes to cooking, I am quite adventurous. I deep fry my ice-cream, I make my own pasta and I carve the whole giant sword fish by myself.

2) What brings you to the food blogging world ? I started blogging as a hobby actually. I was a desperate housewife and I was bored. My husband was out for work in the morning and I was by myself with soap operas whole days. In an attempt of saving me from drowning in boredom, my husband introduced me to the blog world. My first blog was called Homewarming hosted wordpress where I blogged randomly about our lives in Pune and my cooking, soon food took over and has become the center of the topics ever since.

3) How food blogging improves your cooking skill and what new things (cuisine /dish) you are looking forward to explore this year ? Blogging has improved my cooking skill in different directions. I am more confident to try new dishes and ready to explore new cuisines every day. I read a lot of food blogs a day. They are very inspiring and persuasive. I cook more often than I used to and there are more variety of food at our table everyday. There’re so much to learn and I feel very humble whenever I started browsing through other food blogs.

Something I’m pretty much keen to explore this year is African cuisine, something I knew very little about. And also baking! I’m bad at baking and not so good with dessert either. My kitchen is more savoury type than sweet. I want to bake perfect bread, bake my own cake and cookies more often. Saying that I am sad to inform that my oven is dead permanently and I won’t be buying a new one until we move to the new house in April.

So here goes… marinated squid with soy sauce and ginger grilled until slightly charred and curled served with refreshing green sauce. It is very easy, and can be ready in 30 minutes. It’s great as snack or party appetizer.

Recipe: Thai grilled squid with green sauce

Ingredients

A handful coriander finely chopped

Instructions

Arrange the squid in bamboo skewers leaving some space for handling.

Marinate the squid in soy sauce and ginger for half an hour.

While the squid is marinating, make the green sauce.

Bring sugar, vinegar, water, and salt to boil. When all the sugar is dissolved, remove from the heat. Let the savory syrup cool down, and then add green chili, garlic, lime juice, fish sauce and coriander. Stir well and keep aside.

Back to the squid. Set the charcoal grill on medium-high heat.

Grill the squids about 2 minutes each side or until the squid slightly charred on the outside and cooked through.

Serve the hot grilled squids with green sauce.

Number of servings (yield): 8
