Thai Lettuce Wraps
INGREDIENTS:
- 1 rotisserie chicken, cut off the bone and diced small
- 1 tablespoon olive oil
- 1 red pepper-diced
- 1 yellow pepper-diced
- 1/2 c. onion-diced
- 1/3 cup chili sauce
- 3 tablespoons honey
- 1 head butter lettuce-leaves taken off the stem and washed
- 1/2 cup honey roasted peanuts-chopped up
- 1 lime-juiced + 1 lime for decoration
DIRECTIONS:
In a large skillet, heat the oil over medium-high heat. Add the vegetables and cook, stirring, until tender, about 3-4 minutes. add in the chicken to heat through. Stir in the chili sauce and the honey and cook until slightly reduced.
Arrange the lettuce cups on a plate, divide the chicken among the cups and top with the peanuts and lime juice.
