Receta Thai Rice Pulao
Ingredients:
- Basmati Rice – 2 cups, cooked
- Pineapple – 2 cups, chopped
- Carrot – 2 cups, finely chopped
- Coriander Leaves – 2 cups, chopped
- Spring Onions – 4, finely sliced
- Peanuts – 1/4 cup, unsalted, chopped
- Red Chilli Flakes – 2 tsp
- Sugar – 2 tsp
- Thai Fish Sauce – 3 tsp
- Sunflower Oil – 3 to 4 tsp
- Lime Juice – 1/4 cup
- Water as required
Method:
1. Combine the lime juice, sunflower oil, fish sauce, sugar and red chilli flakes in a bowl.
2. Add the rice, chopped pineapple, carrot, spring onions and coriander leaves.
3. Mix until evenly blended.
4. Garnish with the peanuts.
5. Serve.
Tip: Add peas, cucumber or any other vegetable as desired.
