Thai Spring Roll Omelette made using OXO Egg Tools and an Egg Beater Giveaway!

I LOVE being a blogger with the OXO Blogger Outreach Program. I genuinely love OXO tools, making it both easy and rewarding to get to check out their newest and coolest kitchen gadgets and then share them with you. I am running a tad behind right now, because OXO has moved on from eggs and is just starting to promote their awesome fruit tools, but it took me a while to find the time to make an omelette. That sounded crazy I realize, but there it is.

The fabulous egg tool package included the rotary egg beater that I wrote about here (they accidentally sent me a second, which is why I am going to send it to one lucky reader), a 3-In-1 Egg Separator (seen below) and this fantastic Flip and Fold Omelette Turner (seen above). Even though I am giving away the egg beater, I am going to let you read about it through the link, where I have already written about it extensively.

The OXO Good Grips 3-in-1 Egg Separator is wonderful for children. At the end of the day, I still prefer my hands, since my fingers can pinch the egg whites off, but Alex had a blast helping me make my Sunday Brunch Buttermilk Blueberry Pancakes, which require whipped egg whites. There is a ridge on the separator which makes a perfect break in the egg when you gently but firmly whack the egg against it. I also really like that the egg separator attaches to the bowl.

The omelette tool is the best of the bunch (the egg beater is fantastic too, but still doesn’t beat as well as an electric handheld). It is essentially 2 tools in one, with an outer flexible part that conforms to the shape of your pan to get under the omelette, and an inner rigid part that forces that omelette to flip. It is beautifully simple and works really well. I think the proof is in the pictures.

I sadly do not have a recipe for you. I made the filling for Thai spring rolls, using Mung Bean Thread Noodles (or glass noodles), shredded carrots, mushrooms, and zucchini with soy sauce and Thai basil. I served the omelettes with Thai Garlic Sweet Hot Dipping Sauce (‘scuse the pics! I should just re-do that post!) and Sriracha. Think of it as a low carb spring roll. The photo below shows the fillings better.

I want to tinker with the recipe more before sharing it, because I think the idea has serious potential, especially for diabetics missing their occasional spring roll. It lacks the crisp of the shell, but it is otherwise pretty spot on. And although the filling may not have been quite perfect, thanks to the OXO Good Grips Flip and Fold Omelet Turnerthe omelette itself definitely was.
