This cookbook is perfect for anyone managing their diabetes and anyone looking to have a healthier relationship with food. Here's one of the recipes I tried:
Ingredients are as follows:
1 pound frozen peaches, partially thawed
12 ounces frozen raspberries, partially thawed (I used strawberries)
1 (7 ounce) package blueberry muffin mix
3 Tbsp. canola oil
Directions:
Preheat oven to 350 degrees; spray a 13 x 9 inch baking dish with non-stick cooking spray. Place the peaches and raspberries (or strawberries) into the prepared dish.
Sprinkle the dry muffin mix evenly over the fruit.
Drizzle the oil all over the top.
Bake for 1 hour and 15 minutes; until golden brown. My topping was still dry so about half way through the baking, I stirred it around a little to mix with the fruit juices.
Serve and enjoy!
