%20as%20I%20could%20not%20find%20fresh%20corn%20flour.%20I%20did%20not%20have%20per%20se%20the%20traditional%20ingredients%20to%20make%20pupusa,%20but%20I%20did%20have%20black%20beans%20and%20chorizo%20and%20thought%20this%20combination%20would%20make%20an%20excellent%20substitute%20for%20the%20pork%20(%20chicharr%C3%B3n)%20and%20refried%20beans%20normally%20found%20inside.%20So%20needless%20to%20say%20these%20were%20not%20traditional%20pupusas,%20but%20try%20finding%20ingredients%20from%20El%20Salvadorian%20food%20in%20suburbia%20hell%20Louisiana.%3C/p%3E%3Cp%3EAnywho%20-%20I%20thought%20this%20process%20of%20making%20the%20pupusa%20-%20which%20is%20a%20like%20a%20home-made%20corn%20biscuit%20would%20be%20much%20easier%20after%20reading%20recipes.%20Its%20not%20-%20the%20corn%20dough,%20constantly%20stuck%20to%20my%20hands%20no%20matter%20how%20much%20olive%20oil%20or%20water%20I%20had%20on%20them,%20and%20my%20mashed%20black%20bean%20and%20chorizo%20stuffing%20kept%20squeezing%20out%20through%20mini-holes%20that%20would%20develop%20after%20I%20made%20the%20dough%20ball%20into%20a%20flat%20circle.%20Then%20came%20the%20whole%20cooking%20these%20little%20discs%20of%20love...you%20need%20oil%20in%20the%20bottom%20of%20the%20pan,%20cooking%20spray%20would%20not%20cut%20it.%20There%20goes%20making%20these%20circles%20healthy...%3C/p%3E%3Cp%3ENeedless%20to%20say%20I%20made%20about%2010%204-inch%20disc%20pupusas,%20but%20they%20sure%20didn't%20look%20pretty%20like%20the%20pupusas%20I%20had%20in%20D.C.%20However,%20these%20little%20guys%20did%20at%20least%20taste%20good.%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%20a%20small%20sauce%20pot,%20add%20olive%20oil,%20onions,%20garlic,%20and%20cumin%20saute%20until%20onions%20become%20soft.%20Next%20add%20the%20can%20of%20black%20beans%20and%20salsa.%20Cook%20over%20low-medium%20heat%20and%20mash%20with%20a%20potato%20masher%20to%20a%20thick%20consistency%20results.%20Next%20add%20chopped%20chorizo%20-%20check%20for%20salt%20and%20pepper%20and%20remove%20form%20heat.%20Once%20cooled,%20add%20your%20queso%20or%20another%20type%20of%20soft%20cheese%20and%20mix%20thoroughly.%3C/p%3E%3Cp%3EPupusa%20Dough%3C/p%3E%3Cp%3E2%20cups%20of%20Maseca%3C/p%3E%3Cp%3E1%201/4%20cups%20of%20water%3C/p%3E%3Cp%3E1/8%20teaspoon%20of%20salt%3C/p%3E%3Cp%3EMix%20about%20together%20in%20a%20bowl,%20this%20was%20the%20directions%20on%20the%20package%20of%20corn-flour%20-%20I%20found%20I%20needed%20way%20more%20water%20as%20the%20dough%20was%20very%20dry.%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ETo%20make%20pupusas%20-%20make%20sure%20you%20have%20a%20bowl%20with%20either%20water%20or%20olive%20oil%20in%20it%20to%20keep%20your%20hands%20moist.%20Grab%20a%20golf%20ball%20sized%20amount%20of%20dough,%20roll%20into%20a%20ball,%20then%20flatten%20and%20pinch%20edges%20so%20they%20come%20up%20and%20make%20a%20bowl.%20Next,%20place%20about%20tablespoon%20of%20the%20bean%20and%20cheese%20mixture%20into%20the%20center%20of%20the%20bowl,%20close%20up%20bowl%20edges%20by%20basically%20folding%20them%20all%20into%20the%20middle.%20Now%20here%20is%20the%20hard%20part%20and%20this%20truly%20is%20an%20art%20to%20master.%20You%20must%20%22clap%22%20the%20dough%20between%20your%20hands%20very%20fast%20in%20order%20for%20it%20not%20to%20stick%20and%20flatten%20into%20about%20a%204%20inch%20wide%20disc.%20Then,%20place%20in%20well%20heated%20and%20oiled%20pan.%20Cook%20until%20each%20side%20has%20nice%20golden%20brown%20color.%3C/p%3E%3Cp%3EAgain,%20traditionally%20Pupusas%20are%20served%20with%20curtido%20(pickled%20cabbage,%20jalapenos,%20carrots)%20and%20a%20red%20salsa.%20I%20served%20my%20Pupusas%20with%20a%20Avocado%20and%20Tomato%20salsa%20topped%20with%20white%20balsamic%20vinegar.%3C/p%3E%3Cp%3EI%20promise%20next%20time%20to%20take%20pictures%20as%20you%20can%20tell%20the%20one%20above%20is%20a%20pic%20from%20the%20internet%20depicting%20a%20gorgeous%20pupusa%20from%20a%20free-standing%20pupusaria.%20And%20to%20Jesmin%20and%20Brian%20-%20November%2013th%20is%20National%20Pupusa%20Day:)%3C/p%3E){kind=link}
