The Best New York Cheese Cake Ever!

Ingredientes

  • 1 3/4 c. Graham Cracker crumbs
  • 1/2 c. minced walnuts minced fine
  • 1/2 tsp cinnamon
  • 1/2 c. butter (1 stick) melted
  • 2 pkt cream cheese (8 ounce. ea.)
  • 1 c. sugar
  • 4 x Large eggs
  • 1 Tbsp. vanilla
  • 1 pt lowfat sour cream

Direcciones

  1. Preheat oven to 375 degrees f. Have all ingredients at room temperature. Cream together cream cheese and sugar. Beat in one egg at a time, mixing well after each addition, I usually let the mixer beat for a good long while before adding another egg, this incorporates air into the cake. Add in vanilla and mix thoroughly. Turn off mixer and fold lowfat sour cream into the cream cheese mix. Pour the cheese batter into the crust lined pan. Sprinkle the remaining crumbs over the top of the cake. Bake for 30 min and then turn off the oven. Don't OPEN OVEN DOOR. Let cake remain in the oven for one hour. Remove cake from oven and let it cold completely at room temperature. Cover with foil and place in refrigerator. The cake must be refrigerated at least 5 hrs, but, preferably over night. Remove cake from pan by opening the spring form pan and pushing the bottom of the pan up to free it from the collar. Use a straight metal spatula under the bottom of the cake to remove cake from the pan.
  2. CRUST DIRECTIONS: Mix together Graham Cracker crumbs minced nuts, cinnamon and butter. Reserve 3 Tbsp. of crumb mix for topping of cake. Press the remainder of the crumb mix into the bottom and sides of a 9 or possibly 10 inch spring form pan. Be sure to press the crumbs very hard into the corner of where the bottom and sides join.

  4. Diane Says: This special Cheese Cake has been our Christmas Morning Breakfast for over 27 years. I started making it for Christmas Morning Breakfast because my Dad loved the cake and it was kind of a special gift for him. Well. I have continued making it for Christmas morning breakfast ever since even though my Dad passed away over 16 years ago. I could not make the cake for Christmas breakfast for about 2 years after he passed but then my sister and daughter asked me if I could make the cake again. Well, the cake has been our Christmas breakfast since then. It would not be Christmas morning without the cake. We usually wake up early in the morning and open our gifts and then we all agree, "time for coffee and our Cheese Cake!" I hope you all enjoy it as much as we do.
