%20program%20at%20the%20same%20camp%20he%20has%20attended%20for%20the%20past%205%20years.%20Only%20this%20time%20it%20is%20for%204%20weeks%20instead%20of%202%20and%20he%20is%20in%20a%20leadership%20position.%3C/p%3E%3Cp%3EThe%20first%2013%20months%20of%20his%20life%20he%20did%20not%20leave%20my%20side.%20He%20was%20%22one%20of%20those%20babies%22.%20The%20ones%20who%20refuse%20a%20bottle,%20refuse%20to%20sleep%20and%20refuse%20anyone%20except%20his%20mama.%20He%20nursed,%20he%20slept%20(sometimes)%20and%20clung%20to%20me%20like%20a%20shipwreck%20survivor%20clings%20to%20a%20life%20raft.%20Maybe%20he%20was%20afraid%20of%20his%20hair.%3C/p%3E%3Cp%3ESome%20days%20I%20dreamed%20of%20the%20day%20he%20would%20sleep%20through%20the%20night.%20Or%20at%20least%20stop%20nursing.%20Or%20at%20least%20let%20someone%20else%20hold%20him.%20Eventually%20he%20discovered%20activities%20he%20could%20enjoy%20his%20own.%20I%20should%20have%20known%20it%20was%20the%20beginning%20of%20his%20independent%20and%20adventurous%20spirit.%3C/p%3E%3Cp%3ENow%20he%20is%20at%20camp.%20%20For%204%20weeks!%3C/p%3E%3Cp%3EHe%20has%20been%20excited%20for%20weeks.%20WEEKS!%20He%20packed%20himself,%20made%20lists%20of%20things%20he%20would%20need,%20even%20shopped%20at%20the%20last%20minute%20for%20toiletries.%20By%20himself.%20He%20also%20assured%20me%20and%20TBHITW%20that%20he%20was%20fully%20capable%20of%20doing%20all%20of%20this%20himself,%20knew%20everything%20he%20needed%20to%20know%20and%20didn't%20need%20our%20help%20in%20anyway.%3C/p%3E%3Cp%3EMy%20baby%20still%20needs%20me.%20:-)%3C/p%3E%3Cp%3EI%20am%20on%20a%20caprese%20kick.%20Ever%20since%20buying%20that%20log%20of%20fresh%20mozzarella%20cheese%20I%20have%20been%20dreaming%20up%20recipes.%20Here%20is%20my%20version%20of%20a%20lovely%20summertime%20Eggplant%20Parmesan%20-%20lightened%20up%20and%20perfect%20for%20a%20summer%20dinner%20with%20friends.%3C/p%3E%3Cp%3EPlace%20flour%20in%20large%20plastic%20or%20paper%20bag.%20Add%20eggplant%20rounds%20and%20shake%20to%20coat.%3C/p%3E%3Cp%3EWhisk%20eggs%20in%20a%20shallow%20pie%20plate%3C/p%3E%3Cp%3ECombine%20panko%20and%20parmesan%20cheese%20in%20another%20pie%20plate.%3C/p%3E%3Cp%3E(this%20is%20your%20breading%20station)%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375.%3C/p%3E%3Cp%3ERemove%20eggplant%20rounds%20one%20by%20one%20and%20dip%20in%20egg,%20then%20in%20panko%20/%20cheese%20combination.%20Place%20on%20cookie%20sheet.%20Repeat%20until%20all%20the%20eggplant%20is%20coated.%3C/p%3E%3Cp%3EPour%20oil%20onto%20a%20rimmed%20cookie%20sheet,%20place%20in%20preheated%20oven%20for%203%20minutes.%20Carefully%20place%20eggplant%20rounds%20on%20cookie%20sheet.%20Bake%20for%2010%20to%2012%20minutes%20or%20until%20underside%20is%20golden%20and%20crisp.%20Flip.%3C/p%3E%3Cp%3EContinue%20to%20bake%20for%207%20more%20minutes.%3C/p%3E%3Cp%3EAfter%207%20minutes,%20remove%20from%20oven%20and%20top%20with%201%20tablespoon%20tomato%20sauce%20and%20a%20slice%20of%20the%20mozzarella%20/%20caprese%20roll.%20top%20with%20another%20teaspoon%20of%20sauce.%3C/p%3E%3Cp%3EReturn%20to%20oven%20and%20bake%20for%20another%205%20minutes%20or%20until%20sauce%20is%20hot%20and%20cheese%20is%20melted.%3C/p%3E%3Cp%3EServe%20with%20a%20mixed%20green%20salad.%20And%20don't%20forget%20to%20love%20on%20your%20KidAdults%20or%20littles%20or%20middles.%20They%20grow%20up%20so%20fast.%3C/p%3E%3Cp%3EA%20Cook's%20Notes:%20Proof%20-%20this%20meal%20is%20now%20one%20of%20TBHITW's%20and%20my%20favorite%20summertime%20indulgences.%3C/p%3E){kind=link}
