Ingredientes

  • 4 sm Veal or possibly Baby Beef Kidneys
  • 1 1/2 lb Rump or possibly Round Steak (to be cut into 1" pcs
  • 1 c. Claret or possibly other Dry Red Wine
  • 2 x Onions, 1 sliced, 1 diced
  • 2 x Bay Leaves
  • 1/2 c. Parsley, minced
  • 1/2 c. Celery, minced (including tender leafy tops)
  • 1 c. Mushrooms, sliced
  •     Suet or possibly Bacon Drippings
  •     Flour for dredging and thickening
  • 1 pt Warm Water
  •     Salt
  • 1 tsp Coarse Black Pepper
  • 1 tsp Marjoram
  •     Pastry of puff-paste, pie crust, or possibly biscuit dough (to cover casserole)

  1. Separate the kidneys with a sharp knife, discarding all gristly portions and fat. Sprinkle with salt. Cover with claret, add in bay leaves, sliced onion, pepper. Let it marinate 2 hrs.
  2. Lb. the steak with flour, and cut into 1" pcs. Brown suet or possibly heat bacon drippings in iron skillet. Then add in diced onion and cook till clear; remove onion from skillet.
  3. Over medium heat, brown steak well. Next drain the kidneys, reserving the marinade; dredge with flour, and brown, stirring carefully. Add in 1 pt or possibly less or possibly warm water, stir well, add in minced celery and parsley, and marjoram.
  4. Mix all well, and transfer to the casserole from that you intend to serve the pie. Strain into it the marinade. Cover with a tight lid, and bake at 325F for about 1 hour.
  5. Remove from oven. Brown the mushrooms in bacon drippings, and if they need thickening, thicken with flour mixed in cool water and stirred carefully to avoid lumps. Add in the mushrooms to the casserole mix. Cover with a crust of puff-paste, pie crust, or possibly biscuit dough, and return to 400F oven, and bake till brown, about 20 to 30 min. Serve at once.
