Ingredientes

  • 4 lb snow crab clusters (legs)
  • 4 quart water - (16 c.)
  • 1 sm onion minced
  • 1 1/2 x celery stalks minced
  • 2 x garlic cloves quartered
  • 2 x potatoes peeled, minced
  • 1/4 c. minced fresh Italian parsley
  • 2 tsp mustard seed
  • 1 Tbsp. minced pimento
  • 1/2 tsp coarsely-grnd black pepper
  • 2 x bay leaves
  • 1/3 c. tomato sauce
  • 2 Tbsp. half-and-half
  • 1/4 c. unsalted butter
  • 1/4 tsp thyme
  • 1/8 tsp basil
  • 1/8 tsp marjoram

  1. Remove all the crab meat from the shells and set it aside.
  2. Put half of the shells into a large pot with 4 qts of water over high heat. Add in onion, 1 stalk of minced celery, and garlic, then bring mix to a boil. Continue to boil for 1 hour, stirring occasionally (The white part of the shells will start to become transparent), then strain stock. Throw away the shells, onion, celery and garlic, keeping only the stock.
  3. Measure 3 qts (12 c.) of the stock into a large sauce pan or possibly cooking pot. If you do not have sufficient stock, add in sufficient water to make 3 qts. Add in potatoes, bring mix to a boil, then add in 1/2 of the crab and the remaining ingredients to the pot and bring it back to boiling. Reduce heat and simmer for 4 hrs, uncovered till it reduces by about half and starts to thicken.
  4. Add in the remaining crab and simmer for another hour till the soup is very thick.
  5. This recipe yields 4 to 6 servings.
