%20delicious%20chestnut%20ice%20cream%20from%20a%20recipe%20that%20a%20homesick%20%20Belgian%20gave%20me.%20One%20thing%20I'd%20never%20done%20however%20was%20roast%20and%20shell%20them%20myself.%20Until%20this%20year.%3C/p%3E%3Cp%3EI%20have%20to%20admit,%20the%20song%20makes%20it%20sound%20easy,%20and%20online%20there%20are%20a%20million%20websites%20that%20offer%20info%20for%20home%20cooking%20fresh%20raw%20chestnuts.%20It%20shouldn't%20have%20been%20hard%20right?%20Wrong.%20The%20first%20chestnut%20error%20was%20my%20fault.%20I'd%20decided%20to%20roast%20and%20spice%20some%20chestnuts.%20I%20bought%20a%20pound%20of%20chestnuts,%20so%20far%20so%20good.%20Then%20I%20got%20the%20flu.%20A%20week%20or%20more%20passed%20and%20the%20chestnuts%20just%20sat%20there.%20How%20was%20I%20to%20know%20they'd%20go%20bad?%20They%20were%20in%20a%20freaking%20shell.%20That%20should%20have%20been%20some%20protection.%20It's%20not%20like%20they%20were%20standing%20out%20on%20the%20corner%20in%20their%20underpants.%20However%20yes,%20they%20do%20spoil%20and%20in%20fact%20when%20they%20spoil%20they're%20just%20plain%20nasty.%20I%20chalked%20it%20up%20to%20the%20hazards%20of%20being%20sick.%3C/p%3E%3Cp%3ESo%20after%20one%20chestnut%20roasting%20experiment%20went%20South,%20I%20read%20up%20on%20how%20to%20check%20up%20on%20chestnut%20freshness.%20I%20learned%20about%20squeezing%20the%20shell,%20looking%20for%20give,%20feeling%20for%20weight,%20checking%20for%20rattle%20(bad%20sign)%20I%20was%20looking%20for%20firm%20glossy%20and%20dark.%3C/p%3E%3Cp%3EI%20shopped%20for%20chestnuts%20again.%3C/p%3E%3Cp%3EI%20thought%20I%20was%20golden.%20For%20the%20second%20time%20I%20bought%202%20dozen%20Italian%20chestnuts.%20I%20was%20going%20to%20glaze%20them%20in%20a%20sweet%20combo%20of%20spices%20and%20honey,%20put%20my%20feet%20up%20in%20front%20of%20the%20fire%20and%20feel%20seasonal%20cheer.%20What%20happened%20was%20not%20exactly%20what%20I%20was%20expecting.%20Turns%20out%20they%20were%20bad%20also.%20Or%20rather%20they%20were%20bad%20except%20for%20about%205%20of%20them.%20I%20went%20back%20to%20the%20market%20and%20showed%20them%20my%20rancid%20chestnuts%20and%20the%20manager%20gave%20me%20a%20bag%20of%20chestnuts%20as%20a%20substitute.%20The%20fresh%20chestnuts%20were%20Italian,%20the%20bagged%20ones%20were%20from%20China.%20Yes%20there%20was%20a%20difference,%20but%20if%20you%20can%20get%20hold%20of%20good%20quality%20chestnuts%20here's%20how%20to%20fix%20them.%3C/p%3E%3Cp%3EHoney%20Glazed%20Chestnuts%3C/p%3E%3Cp%3EHere's%20What%20You%20Need:%3C/p%3E%3Cp%3EHere's%20What%20To%20Do:%3C/p%3E%3Cp%3ECut%20an%20X%20on%20the%20chestnuts%20on%20the%20flat%20side%20of%20the%20shell.%3C/p%3E%3Cp%3EPut%20the%20chestnuts%20in%20their%20X%20marked%20shell%20into%20a%20pan%20of%20water.%3C/p%3E%3Cp%3EBring%20the%20water%20to%20a%20boil.%3C/p%3E%3Cp%3EOnce%20the%20water%20starts%20boiling,%20boil%20the%20chestnuts%20for%20about%205%20to%2010%20minutes.%3C/p%3E%3Cp%3ELet%20the%20chestnuts%20cool.%3C/p%3E%3Cp%3EPeel%20the%20chestnuts%20thoroughly.%3C/p%3E%3Cp%3EIn%20a%20saucepan%20heat%204%20Tbs%20of%20unsalted%20butter.%3C/p%3E%3Cp%3EWhen%20the%20butter%20starts%20to%20melt%20add%20in%203%20tbs%20of%20honey.%3C/p%3E%3Cp%3EWhen%20the%20mixture%20has%20melted%20together%20add%20in%20the%20salt,%20cayenne,%20and%20cinnamon.%3C/p%3E%3Cp%3EPut%20the%20peeled%20chestnuts%20into%20this%20mixture.%3C/p%3E%3Cp%3ESwirl%20them%20around%20in%20the%20butter,%20honey%20and%20spice%20mixture%20until%20they're%20coated.%3C/p%3E%3Cp%3EServe%20them%20up%20drizzled%20with%20the%20honey%20mixture.%3C/p%3E%3Cp%3ESo%20how%20were%20they?%20Let's%20put%20it%20this%20way.%20I%20liked%20them.%20Alan%20as%20it%20turns%20out%20is%20not%20a%20chestnut%20fan.%20He'd%20eaten%20them%20before%20in%20ice%20cream%20or%20with%20a%20turkey%20wrapped%20around%20them,%20but%20on%20their%20own?%20Not%20so%20much.%20So%20all%20that%20work%20for%20a%20handful%20of%20nuts%20coated%20in%20spicy%20honey.%20I%20thought%20they%20were%20a%20%20tasty%20experiment,%20but%20too%20labor%20intensive.%20So%20much%20for%20the%20chestnuts.%3C/p%3E%3Cp%3EComing%20up%20next,%20I'm%20cooking%20a%20big%20Indian%20meal%20for%20Alan's%20birthday%20tomorrow%20%20and%20even%20though%20he'll%20have%20his%20favorite%20birthday%20cake,%20I'm%20making%20a%20gluten%20free%20flourless%20chocolate%20cake%20for%20our%20celiac%20sensitive%20friends.%20Follow%20along%20on%20Twitter%20@kathygor%3C/p%3E){kind=link}
