Receta The Turtle Deli’s Cheesecake
(Note: This recipe is taken from the book: South Carolina’s Historic Restaurants and their Recipes by Dawn O’Brien and Karen Mulford. The cheescake is/was served at The Turtle Deli in Summerville.
I purchased this recipe book for my mother whilst on holiday in Charleston, and have made this cheesecake a number of times, and everyone who has tasted it loves it!)

- Melt ½ stick (¼ cup) margarine/butter.
- Mix together graham cracker crumbs, ¼ cup of sugar and the melted margarine. Pat into the bottom of a 10-inch springform pan and set aside.
- In a large bowl blend the cream cheese , remaining sugar and cornstarch, beating with an electric mixer until thoroughly blended.
- Put cottage cheese, eggs and lemon juice in a blender bowl and blend on medium speed until well mixed. Pour into the cream cheese mixture and beat well with an electric mixer â about 2 minutes, or until thoroughly blended.
- Melt the remaining margarine/butter and add to the mixture, beating well. Add sour cream and beat until blended.
- Pour into graham cracker crust. Bake at 350 ° F (180° C) for 1½ hours. Turn off the oven and leave the cake in the oven for two hours.
- Remove the cheesecake from the oven and allow it to remain at room temperature for an additional two hours before serving or refrigerating.
