%20but%20just%20because%20we%E2%80%99re%20pretty%20early%20in%20the%20season%20here%20and%20this%20bad%20boy%20has%20really%20packed%20a%20punch.%20The%20wind!%20The%20drifts!%20Oh%20my%20gosh,%20the%20drifts!%20We%20are%20snowbound%20in%20our%20neighborhood%20because%20of%20the%20drifts%20in%20the%20streets.%20In%20a%20nutshell,%20it%E2%80%99s%20bad.%3C/p%3E%3Cp%3EWhy,%20Winter,%20why??%20Ugh.%3C/p%3E%3Cp%3EThe%20plus%20side%20to%20all%20of%20this%20is,%20of%20course,%20the%20snow%20day.%20My%20office%20closed%20today.%20Eric%20had%20big%20plans%20to%20get%20to%20work%20but%20after%20attempting%20to%20clear%20off%20the%20driveway%20(and%20having%20the%20wind%20blow%20everything%20he%20cleared%20right%20back%20into%20his%20face)%20and%20watching%20our%20neighbor%20(who%20works%20for%20the%20same%20company)%20get%20hung%20up%20in%20a%20huge%20drift%20in%20front%20of%20our%20house,%20he%20decided%20not%20to%20be%20the%20hero%20and%20worked%20from%20home.%20It%20turns%20out%20none%20of%20his%20employees%20got%20in%20either.%20We%20had%20no%20choice%20but%20stay%20home.%3C/p%3E%3Cp%3ESo,%20what%20to%20do%20when%20the%20weather%20outside%20is%20frightful?%20Why,%20bake%20of%20course!%20Needless%20to%20say,%20only%20with%20things%20already%20in%20the%20house.%20And%20bake%20I%20did%E2%80%A6but%20not%20the%20cookies%20you%E2%80%99ll%20find%20below.%20I%20made%20these%20over%20the%20weekend.%20PSYCH!%20Ha.%20Stay%20tuned%20for%20what%20I%20made%20today,%20coming%20soon%20to%20a%20blog%20near%20you.:)%3C/p%3E%3Cp%3EAnyway,%20I%20really%20loved%20these%20cookies.%20Chewy%20(chocolate%20cookie),%20crunchy%20(crushed%20hazelnuts),%20creamy(Nuetlla)%20%E2%80%93%20all%20rolled%20into%20one%20tasty%20little%20bite.%20The%20only%20thing%20to%20be%20aware%20of%20%E2%80%93%20really%20punch%20your%20thumb%20down%20hard%20in%20the%20middle.%20I%20didn%E2%80%99t%20intent%20enough%20on%20my%20first%20batch%20so%20I%20didn%E2%80%99t%20really%20have%20a%20cute%20little%20home%20for%20my%20Nutella.%20Other%20than%20that,%20these%20are%20a%20simple%20and%20delicious%20treat.%20The%20perfect%20addition%20to%20any%20holiday%20goodie%20tray.%3C/p%3E%3Cp%3ESpecial%20shoutout%20to%20my%20wonderful%20husband%20Eric%20who%20assisted%20me%20greatly%20with%20this%20particular%20recipe%20by%20painstakingly%20cracking%20dozens%20of%20hazelnuts%20out%20of%20their%20shell%20with%20a%20hammer%20and%20a%20kitchen%20towel.%20That%20is%20love,%20people.%20LOVE!%20I%20love%20a%20man%20who%E2%80%99s%20handy%20(in%20the%20kitchen).%3C/p%3E%3Cp%3EINGREDIENTS:%3C/p%3E%3Cp%3EDIRECTIONS:%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3E2.%20Weigh%20or%20lightly%20spoon%20flour%20into%20a%20dry%20measuring%20cup;%20level%20with%20a%20knife.%20Combine%20flour,%20sugar,%20cocoa,%20and%20salt;%20stir%20with%20a%20whisk.%20Beat%20butter%20with%20a%20mixer%20until%20light%20and%20fluffy.%20Whisk%20egg%20yolks%20together%20with%20espresso%20powder%20(if%20using).%20Add%20the%20yolk%20mixture%20and%20vanilla%20to%20butter;%20beat%20well.%20Add%20flour%20mixture%20to%20butter%20mixture;%20beat%20at%20low%20speed%20just%20until%20combined.%3C/p%3E%3Cp%3E3.%20Turn%20dough%20out%20onto%20a%20sheet%20of%20wax%20paper;%20knead%206%20times%20or%20until%20smooth%20and%20shiny.%20Roll%20the%20dough%20into%20%201-inch%20balls.%20Roll%20the%20balls%20in%20nuts,%20pressing%20gently%20to%20make%20sure%20they%20stick.%20Arrange%20balls%201%20inch%20apart%20on%20baking%20sheets%20lined%20with%20parchment%20paper.%20Press%20thumb%20into%20center%20of%20each%20cookie,%20leaving%20an%20indentation.%20Bake,%201%20batch%20at%20a%20time,%20at%20350%C2%B0%20for%2010%20minutes.%20Remove%20cookies%20from%20pans;%20cool%20completely%20on%20wire%20racks.%20Spoon%20about%201/2%20teaspoon%20hazelnut-chocolate%20spread%20into%20center%20of%20each%20cookie.%3C/p%3E%3Cp%3EMakes%20about%2028%20cookies.%3C/p%3E%3Cp%3EENJOY!%3C/p%3E%3Cp%3EOne%20year%20ago:%20Eggnog%20Muffins%20with%20Nutmeg%20Streusel%20Topping.%20Such%20a%20great%20holiday%20treat!%3C/p%3E){kind=link}
