Receta This Month’s Recipes: January 2016
The first month of 2016 is over already! It’ll be Christmas again before we know it. In fact, Christmas already feels like a million years ago, anyone else feel like that?
It’s been a mixed month for me – holiday excitement followed very swiftly by illness! I’m still suffering from shingles, but luckily it hasn’t developed into anything too major, and I should still be able to travel next week (woop woop!). The pain and discomfort is bearable (and that’s coming from a total wuss). I’m trying to rest up a bit, but I’m also trying to work really hard to get some recipes ready to go up while I’m away, so it’s a tough balance to find!
As far as this month’s vegetarian recipes go, I’ve been trying to keep them fairly healthy, as per the responses I received on the reader survey I put out just before Christmas. My healthy eating resolutions lasted about two weeks… but still, that’s two weeks of healthy eating that I wouldn’t have done otherwise, so I still think it’s always worth trying!
