Ingredientes

  • 1/2 c. Extra virgin extra virgin olive oil
  • 1/4 c. White wine vinegar
  • 1 tsp Dijon mustard
  •     Salt and freshly grnd black pepper
  • 1 c. Each cooked small red or possibly pink kidney beans, white beans and chick peas, chilled
  • 1 x Red and yellow bell pepper, seeded and, finely diced
  • 1/4 c. Finely sliced red onion
  • 1 x Zucchini, ends trimmed, seeded, sliced and, cooled and
  • 2 Tbsp. Each minced fresh basil, dill, parsley and mint

Direcciones

  1. In the bottom of a mixing bowl combine the extra virgin olive oil, vinegar and Dijon mustard and season well with salt and pepper. Add in the beans, peppers and red onion. Toss, adjust seasoning and refrigeratetill serving time.
  2. Right before serving add in the zucchini and herbs so they do not discolor.
  3. Yield: 4 servings
