Three Bean Vegetarian Chili Mix for a Savory Gift from Your Kitchen

I love getting and giving gifts from my kitchen. It makes me feel so valued when someone takes the time to make something and then give it to me.

I especially like savory things that give me a quick meal to throw together – so I can get back to the frantic pace of shopping, mailing, decorating . . . etc., etc., etc. . .

Trust Me: your friends and family will thank you for this if it winds up on their doorstep.

This is a super easy vegetarian chili to stir together and then simmer, or just stir together in the slow cooker. Try it for a fabulous Meatless Monday. Turn on and the just sit back and wait for the house to smell amazing.

THREE BEAN CHILI MIX

Stir together all beans, minced onion and minced tomatoes. Mix together remaining ingredients and divide evenly into 8 small zip top bags. Scoop up 2 cups of bean mixture into each of 8 gift bags or jars. Place on bag of spice mixture into each jar. Each batch will make 6 to 8 servings of chili.

TO MAKE CHILI:

Combine 2 cups of mix with 8 cups of water in a large stockpot. Bring to a boil and simmer 3 minutes. Turn off heat and let stand for one hour.

Add to pot 2 cans (14 ounces each) diced tomatoes with juices; 2 cans (14 ounces each) vegetable broth; one can (8 ounces) tomato sauce; one tablespoon vinegar; one bag of spice mixture.

Bring to a boil, reduce heat to a low simmer. Cover and simmer about 2 hours, or until beans are tender. Taste and add salt and pepper as needed.
