If there were such thing as a Grilled Cheese Octagon I would enter this sandwich to take on all challengers!

Chili Grilled Cheese Sandwich

Time it Takes: 10 minutes

Makes: 1 sandwich

2 slices bread

Toast both slices of bread in a toaster. Spread butter on one side of each toasted slice and brush the other side with olive oil (this will prevent the inside of the bread from getting soggy).

In a non-stick skillet, melt 2 tsp butter over medium heat. Place one slice of bread, butter side down, in the skillet. Top with half the slices of cheese and spread chili on top. Lay more cheese slices over chili and place 2nd slice of bread on top, butter side up.

Cook for two minutes or until bread is golden brown. Carefully flip sandwich to brown the other side, about 1 to 2 minutes.

How does a Sunday sing along sound? I'm with ya if you're not the sing along type but it's hard not to chime in with an enthusiastic "Ho...Hey" while listening to this uplifting song by The Lumineers. Love this tune!

Broccoli getting a bad rap in my house all started with a police officer visiting my son's grade one class. The constable was there to chat with the kids and answer questions about what a police officer does. One of the topics included jail.

When my son got home from school he asked me what it's like to be in jail. I explained to him that I had never been to a jail but that it didn't sound like it would be much fun.

I went on to explain that the people in jail probably don't get to play much or go outside very often. I also said the food was crappy.

He's thinks "crappy food" means unhealthy, so he responded "You mean they get to eat candy all day"?

That one made me laugh. I explained I meant the food most likely didn't taste very good.

This is where things got interesting. He said "You know what's a crappy food'?

I of course asked "What'?

He said "Broccoli"!

Now this threw me off because broccoli is one of his favorite foods for dinner. I'm not kidding. The kid loves the stuff. So I said "But you love broccoli".

He then went on to name characters from the kids movie Ice Age and other characters from the cartoon Sponge Bob who have expressed that broccoli is "crappy".

Now I don't want to blame the eating habits of kids or the obesity problem on cartoon characters but they certainly aren't helping. Never thought I would have to convince my son to eat something he actually likes. Sheesh!
