- In a bowl combine Large eggs, shredded vegetables, parsley, salt, and pepper. Stir in matzoh meal. Shape into flat cakes, using 1 to 2 Tbsp. mix for each. Fry in 1 to 2 Tbsp. of warm oil till brown. Drain on paper toweling. Makes 24 to 35 latkes.
