%20teenage%20girls%20and%20trying%20to%20fatten%20us%20up%20on%20yummy%20Mexican%20food%20straight%20from%20her%20own%20kitchen.%20Syl's%20house%20was%20my%20home%20away%20from%20home%20in%20high%20school%20and%20I%20was%20like%20one%20of%20the%20family%20there.%3C/p%3E%3Cp%3ESo,%20when%20the%20hubs%20and%20I%20were%20watching%20Sunny%20Anderson's%20%22Cooking%20for%20Real%22%20(not%20normally%20a%20show%20I%20enjoy)%20on%20the%20Food%20Network%20and%20Big%20Man%20of%20the%20house%20responded%20enthusiastically%20to%20her%20rendition%20of%20Empanadas,%20I%20knew%20I%20had%20to%20make%20them%20for%20him.%20As%20you%20know%20very%20well,%20any%20time%20the%20hubs%20shows%20an%20interest%20in%20trying%20something%20new,%20I%20jump%20at%20the%20chance%20to%20enlighten%20his%20picky-eater%20tastebuds.%3C/p%3E%3Cp%3EUnfortunately,%20Sunny's%20recipe%20calls%20for%20store%20bought%20empanada%20shells.%20Now,%20its%20bad%20enough%20trying%20to%20find%20some%20fairly%20basic%20ingredients%20in%20this%20little%20hamlet%20that%20I%20call%20home,%20but%20empanada%20shells?%20Even%20Sylvia%20couldn't%20remember%20ever%20seeing%20such%20a%20creature%20in%20the%20stores,%20and%20she%20grew%20up%20with%20it!%20So,%20after%20a%20little%20digging%20online,%20I%20found%20a%20recipe%20for%20empanada%20dough%20that%20sounded%20both%20authentic%20and%20easy.%20Because,%20after%20all,%20empanadas%20are%20all%20about%20the%20dough.%20Bad%20dough...baaaad%20empanadas.%3C/p%3E%3Cp%3EI%20finally%20made%20these%20for%20the%20hubs%20on%20Sunday%20night.%20The%20dough%20was%20very%20easy%20to%20roll%20out%20and%20it%20made%20me%20about%20seven%206-inch%20shells.%20The%20filling%20smelled%20amazing%20cooking%20up%20in%20the%20pan.%20All%20the%20spices%20combined%20to%20make%20a%20mouth%20watering%20aroma%20in%20my%20house.%3C/p%3E%3Cp%3ENot%20that%20this%20is%20going%20to%20shock%20anyone....but%20the%20hubs%20wasn't%20a%20big%20fan.%20(And,%20naturally,%20the%20rat%20bastard%20didn't%20even%20taste%20them%20before%20he%20poured%20a%20healthy%20dose%20of%20Country%20Bob's%20all%20purpose%20sauce%20right%20on%20top%20of%20them!%20Grrr...)%20He%20ate%20them%20anyway,%20and%20even%20took%20some%20for%20lunch%20the%20next%20day.%20However,%20he%20made%20a%20point%20of%20telling%20me%20when%20he%20got%20home%20that%20I%20didn't%20need%20to%20make%20them%20again,%20as%20they%20were%20only%20okay%20to%20begin%20with,%20and%20weren't%20worth%20a%20darn%20reheated.%3C/p%3E%3Cp%3EDefeat.%3C/p%3E%3Cp%3EDid%20I%20mention%20I%20wasn't%20even%20remotely%20hungry%20that%20night%20and%20so%20I%20didn't%20actually%20try%20them%20myself?%3C/p%3E%3Cp%3EWell,%20I'm%20having%20leftover%20empanadas%20for%20lunch%20today%20and%20I%20am%20now%20certain%20that%20my%20husband%20is%20either%20smoking%20crack%20or%20he%20has%20completely%20destroyed%20his%20taste%20buds%20living%20the%20life%20of%20a%20country%20boy.%20They%20taste%20damned%20fine%20to%20me.%20The%20dough%20is%20flaky%20and%20light%20(you%20can%20tell%20there%20is%20lard%20in%20it)%20and%20the%20filling%20is%20really%20flavorful.%20A%20little%20hot%20salsa%20on%20the%20side%20and%20I%20am%20a%20happy%20girl.%3C/p%3E%3Cp%3EIn%20my%20book,%20another%20success....that%20I%20probably%20won't%20make%20again,%20just%20because%20the%20main%20eater%20in%20the%20house%20won't%20eat%20them.%20Bummer.%3C/p%3E%3Cp%3EEmpanada%20Dough%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E3%20cups%20flour%3C/p%3E%3Cp%3Epinch%20of%20salt%3C/p%3E%3Cp%3E2%20teaspoons%20sugar%3C/p%3E%3Cp%3E3%20teaspoons%20baking%20powder%3C/p%3E%3Cp%3E1/2%20cup%20lard%20or%20shortening%3C/p%3E%3Cp%3E3/4%20cup%20chicken%20stock%3C/p%3E%3Cp%3E1%20egg%3C/p%3E%3Cp%3Eoil%20or%20shortening%20for%20frying%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3EMix%20the%20dry%20ingredients%20together.%20Cut%20in%20the%20lard%20with%20a%20pastry%20cutter%20or%202%20knives%20until%20the%20mixture%20resembles%20coarse%20meal.%20Whisk%20egg%20and%20mix%20into%20chicken%20broth.%20Mix%20the%20broth%20and%20egg%20into%20the%20flour%20mixture%20and%20knead%20until%20dough%20forms.%20Cover%20and%20refrigerate%20for%2030%20minutes.%3C/p%3E%3Cp%3ELightly%20flour%20a%20surface%20and%20roll%20out%20dough%20to%201/4%20inch%20thick.%20Cut%20into%204-inch%20circles%20for%20small%20empanadas,%205-inch%20for%20medium%20ones%20or%206-inch%20for%20large%20ones.%3C/p%3E%3Cp%3EPlace%201%20tablespoon%20of%20filling%20in%20the%20center%20of%20the%20dough%20circle%20for%20small%20empanadas,%202%20tablespoons%20for%20medium%20and%203%20tablespoons%20for%20large.%3C/p%3E%3Cp%3EFold%20dough%20over%20to%20make%20a%20filled%20half%20circle%20and%20use%20a%20fork%20to%20press%20the%20edges%20together.%20Refrigerate%20uncooked%20empanadas%20for%203%20hours.%3C/p%3E%3Cp%3EFry%20in%20350%20degree%20oil%20for%206-7%20minutes%20or%20until%20golden%20brown.%3C/p%3E%3Cp%3EBay%20Ridge%20Empanadas%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EIn%20a%20skillet%20over%20medium-high%20heat,%20add%20the%20olive%20oil.%20When%20the%20oil%20is%20warm,%20add%20the%20onion%20and%20saute%20until%20softened,%20about%203%20minutes.%20Add%20the%20garlic%20and%20saute%201%20minute%20more.%20Stir%20in%20the%20beef,%20cumin,%20curry,%20chili%20powder,%20allspice,%20thyme,%20cinnamon,%20and%20salt%20and%20pepper,%20to%20taste.%20Saute,%20stirring%20often,%20until%20the%20beef%20has%20browned,%20about%2010%20minutes.%20Add%20the%20corn%20and%20the%20Cheddar%20and%20set%20aside%20to%20cool.%20Preheat%20the%20oven%20to%20375%20degrees%20F.%3C/p%3E%3Cp%3EMelt%20the%20butter%20with%20the%20Saz%C3%B2n%20powder%20small%20pan%20over%20low%20heat.%20Stir%20well%20to%20combine%20and%20reserve.Working%20with%201%20wrapper%20at%20a%20time,%20scoop%202%20heaping%20tablespoons%20of%20the%20filling%20into%20the%20center%20of%20the%20wrapper.%20Brush%20the%20edges%20of%20the%20dough%20with%20beaten%20egg,%20then%20fold%20the%20dough%20over%20to%20form%20a%20half%20moon,%20pressing%20out%20the%20air%20with%20your%20fingertips.Use%20the%20tines%20of%20a%20fork%20to%20pinch%20and%20seal%20the%20edges,%20creating%20a%20border%20about%201-inch%20wide.%20Repeat%20with%20remaining%20filling%20and%20wrappers.%20Transfer%20the%20patties%20to%20a%20baking%20sheet%20lined%20with%20parchment%20paper.%20Using%20a%20pastry%20brush,%20coat%20the%20tops%20of%20patties%20with%20the%20reserved%20Saz%C3%B2n%20butter.Bake%20according%20to%20dough%20package%20instructions,%20or%20until%20puffed%20and%20lightly%20browned,%20about%2020%20minutes.***Notes:%20Since%20these%20are%20two%20separate%20recipes,%20some%20of%20the%20directions%20may%20not%20make%20complete%20sense.%20Like%20the%20fact%20that%20the%20dough%20recipe%20calls%20for%20oil%20for%20frying.%20Yeah,%20I%20baked%20them%20according%20to%20the%20empanada%20recipe.%20And%20the%20way%20it%20says%20to%20let%20unbaked%20empanadas%20sit%20for%20three%20hours.%20Nah,%20not%20so%20much.%20I%20basically%20used%20the%20dough%20recipe%20for%20the%20ingredients%20and%20then%20followed%20the%20second%20recipe%20for%20the%20rest%20of%20the%20directions.%3C/p%3E){kind=link}
