Thyme Roasted Chicken Breast With Morel Madeira

Ingredientes

  • 1 c. Boiling water
  • 1 ounce Dry morels,rinsed,liquid removed
  • 2 x Chicken breast halves w/skin
  • 1 Tbsp. Vegetable oil
  • 3/4 c. Onion, minced
  • 2 lrg Cloves garlic, chopped
  • 1 Tbsp. Fresh thyme,chopped
  •     Or possibly 1 ts dry
  • 1 1/2 c. Chicken stock
  • 1/4 c. Dry madeira
  • 1 Tbsp. Corn starch
  • 1 Tbsp. Madeira

Direcciones

  1. Combine boiling water and morels in a small bowl. Let stand till morels soften, about 35 min. Strain;reserve soaking liquid. Coarsely chop morels.
  2. Preheat oven to 400F. Sprinkle chicken with salt and pepper. Heat oil in a large non-stick skillet over medium high heat. Add in chicken to skillet; cook till golden brown about 4 min a side. Transfer chicken to a shallow baking dish (don't clean skillet. bake till chicken is cooked through, about 15 min.
  3. Meanwhile heat the same skillet over medium high heat. Add in onion, garlic and thyme and saute/fry till golden brown about 5 min. Add in morel soaking liquid, leaving any residue in the bowl. Boil the mix till most of the liquid evaporates, about 4 min. Add in chicken broth and 1/4 c. of Madiera; boil till gravy is reduced to 1 1/2 c., aboout 5 min.
  4. Strain gravyinto small saucepan; add in morels. Cover and simmer 5 min.
  5. Whisk 1 Tbsp. of cornstarch and 1 tbs madiera in a small bowl. Whisk into gravy; simmer till thickened, about 30 seconds. Season gravy with salt and pepper. Spoon over chicken and serve. Bon-App 3/96 - Walt
