Receta Tinolang Halaan
Back in the Philippines you can buy clams at a really cheap price, here in New Zealand it’s a different story, it is expensive and would cost you around NZ$ 8.00-12.00 (PHP 300.00-450.00) a kilo, remember that kilo might only equate to 150g of clam meat but even though its expensive if a craving hits you there is no other option but to drive to the supermarket and get one. That craving hit us several weeks ago hence we made Tinolang Halaan or clam and ginger soup. This dish is one of the simple soup dishes you can find in our cuisine, it is so simple it is just made out of clams, ginger, onion and garlic. It might be simple but if you had tried clams you will know how tasty this will be, we usually pair it with some crispy fried fish and rice to make it a whole healthy meal.
Ingredients
- 1 kg clams, cleaned
- 1 thumb sized ginger, julienned
- 1 large onion, chopped
- 6 cloves garlic, minced
- 2 stalks spring onions, sliced
- fish sauce
- freshly ground pepper
- oil
Method
1. In a pot sauté garlic, ginger and onions.
2. Add clams then enough water just to cover the clams (you can reduce the amount of water to give it more flavour), bring to a boil then simmer covered.
3. Once shells are opened add the spring onions.
4. Simmer for two more minutes then season with fish sauce and freshly ground black pepper.
