%20ago,%20I%20promised%20someone%20I%20work%20with%20that%20I%20would%20make%20them%20some%20special%20biscotti.%20I%20did.%20I%20promised.%20And%20then%20I%20never%20followed%20through.%20Shame%20on%20me.%3C/p%3E%3Cp%3EWell,%20when%20I%20was%20trying%20to%20decide%20what%20kind%20of%20cookies%20to%20make%20for%20Steph%20Chows%20Cookie%20Exchange,%20the%20subject%20came%20up%20again.%20And%20then%20we%20had%20two%20snow%20days%20in%20a%20row.%20And%20I%20got%20a%20little%20crazy.%20And%20I%20baked.%20A%20lot.%3C/p%3E%3Cp%3EI%20ended%20up%20making%20two%20different%20kinds%20of%20sweet%20biscotti%20(for%20my%20coffee%20lovin%E2%80%99%20friends%20at%20work!),%20both%20of%20which%20were%20new%20varieties%20for%20me.%20I%20have%20a%20basic%20biscotti%20recipe%20and%20I%20usually%20just%20switch%20out%20the%20fruit%20or%20nuts%20for%20other%20ingredients,%20but%20in%20this%20case,%20I%20used%20all%20new%20recipes.%3C/p%3E%3Cp%3EBranching%20out%20from%20blueberry,%20cherry,%20cranberry,%20and%20the%20like,%20I%20have%20turned%20to%20pineapple%20and%20mango!%3C/p%3E%3Cp%3EI%20started%20with%20Pi%C3%B1a%20Colada%20Biscotti,%20a%20blend%20of%20dried%20pineapple%20and%20shredded%20coconut,%20and%20then%20moved%20on%20to%20Island%20Biscotti,%20mixed%20with%20the%20flavors%20of%20coconut,%20mango,%20and%20macadamia%20nuts.%20Both%20were%20a%20big%20hit%20here%20at%20the%20office,%20but%20the%20Island%20Biscotti%20reign%20supreme%20by%20a%20vote%20of%20the%20tasters.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20300%C2%B0.%3C/p%3E%3Cp%3ECombine%20flour%20and%20next%204%20ingredients%20(through%20nutmeg).%20Place%20sugar,%20vanilla,%20and%20eggs%20in%20a%20large%20bowl;%20beat%20with%20a%20mixer%20at%20medium%20speed%202%20minutes%20or%20until%20thick.%20Add%20flour%20mixture%20and%20coconut;%20stir%20to%20combine%20(dough%20will%20be%20very%20sticky).%20Turn%20dough%20out%20onto%20a%20heavily%20floured%20surface;%20knead%20lightly%207%20or%208%20times.%20Shape%20dough%20into%20a%2015%20x%203-inch%20roll.%20Place%20roll%20on%20a%20baking%20sheet%20lined%20with%20parchment%20paper,%20and%20pat%20to%201-inch%20thickness.%20Bake%20at%20300%C2%B0%20for%2040%20minutes%20or%20until%20roll%20is%20golden%20brown.%20Cool%20for%205%20minutes%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3ECut%20roll%20into%2020%20(1/2-inch-thick)%20slices;%20stand%20slices%20upright%20on%20baking%20sheet.%20Bake%2020%20minutes%20(cookies%20will%20be%20slightly%20soft%20in%20center%20but%20will%20harden%20as%20they%20cool).%20Remove%20from%20baking%20sheet;%20cool%20completely%20on%20wire%20rack.%3C/p%3E%3Cp%3EMy%20partner%20over%20at%20Steph%20Chows%20Cookie%20Exchange%20can%20look%20forward%20to%20receiving%20some%20of%20these%20from%20me%20early%20next%20week!%3C/p%3E){kind=link}
