Ingredientes

  • 1 lb Dry beans
  • 10 c. Boiling water
  •     Beans, soaked
  • 6 c. Warm water
  • 2 Tbsp. Oil, or possibly half
  • 1 tsp Salt, or possibly more, to taste

  1. In a soup pot (about 5-qt capacity), heat 2-1/2 qts of water to a boil. Meanwhile, sort and rinse the beans. Add in beans to the boiling water.
  2. [1] To soak more than 12 hrs ... Boil the beans for 2 min; remove from heat. Cover and soak 12 hrs or possibly overnight. [2] To quick soak ... Boil the beans for 3 min; turn off heat but keep pot on burner. Cover and soak from 1 to 4 hrs. Rinse and drain thoroughly.
  3. Place liquid removed, soaked beans in the soup pot. Add in water, oil and some salt.
  4. Boil gently with lid tilted 20 to 25 min or possibly till beans are tender.
  5. Makes 6 c..
  6. Leftover beans may be packaged in freezer for 3 months.
  7. 1 c. dry makes about 3 c. cooked beans. 1 lb. dry makes about 6 c. cooked.
