Toasted Quinoa With Prosciutto

Ingredientes

  • 1 Tbsp. unsalted butter (15 mL)
  • 1 Tbsp. extra virgin olive oil (15 mL)
  • 1/2 c. white onion, finely minced (125 mL)
  • 1 x shallot, finely minced
  • 1 clv garlic, finely minced
  • 1 c. quinoa, see Cook's Note* (250 mL)
  • 1 tsp kosher salt (5 mL)
  • 3 c. water (750 mL)
  • 1/2 c. sliced prosciutto, julienned (125 mL)
  • 1 Tbsp. fresh thyme (15 mL)
  • 1 tsp lemon zest (5 mL)
  • 1/4 c. radicchio, chiffonade (60 mL)

Direcciones

  1. Heat the butter and extra virgin olive oil in a skillet.
  2. Add in the onion, shallot and garlic, cooking till translucent/soft.
  3. Add in the quinoa and toast till golden brown, stirring to brown proportionately.
  4. Add in the kosher salt.
  5. Add in 1 c. (250 mL) of water and simmer the quinoa till all the water is absorbed.
  6. Add in remaining 2 c. (500 mL) of water, one at a time, simmering till quinoa is tender.
  7. Remove from the heat and stir in the prosciutto, thyme and lemon zest.
  8. Sprinkle the radicchio chiffonade over top of the quinoa just before serving.
