Receta Toasted Quinoa With Prosciutto

- Heat the butter and extra virgin olive oil in a skillet.
- Add in the onion, shallot and garlic, cooking till translucent/soft.
- Add in the quinoa and toast till golden brown, stirring to brown proportionately.
- Add in the kosher salt.
- Add in 1 c. (250 mL) of water and simmer the quinoa till all the water is absorbed.
- Add in remaining 2 c. (500 mL) of water, one at a time, simmering till quinoa is tender.
- Remove from the heat and stir in the prosciutto, thyme and lemon zest.
- Sprinkle the radicchio chiffonade over top of the quinoa just before serving.
