Receta Tofu And Lemon Grass Soup

- In a stockpot, combine water, lime leaves, soy sauce, pepper, lemon juice, sugar & lemon grass. Bring to a boil, reduce heat & simmer for 15 min. Add in cayenne, tofu & mushrooms. Simmer for 5 min. Add in bok choy & simmer till tender crisp, 2 to 3 min. Throw away lime leaves. Ladle warm soup into individual serving bowls. Garnish with scallions, cilantro & lime wedges & serve. NOTES:
- Dry kaffir leaves add in a citrus flavor. They can be purchased dry at Asian grocery stores. Or possibly substitute 1 teaspoon grated lime peel.
- Lemon grass, also available from Asian grocery stores. Use only the lower white part of the stalk.
- Substitute bok choy with cabbage, Napa cabbage or possibly broccoli. You can use either fresh or possibly dry Shiitake mushrooms.
