This Tofu Stir-Fry recipe is easy, nutritious and of course delicious! The vegetables are softened until almost caramelized in a honey sriracha Asian sauce!

With the Christmas holidays coming up, sometimes the simplest of dishes are welcome right before (and after) we hit the storm of Christmas cooking! This Tofu Stir-Fry seemed like the ideal recipe to share because it’s completely customisable in that you can always substitute chicken in place of stir-fry, it’s incredibly delicious and you can make it in large batches! This recipe has made it to my regular rotation because it is filling without even trying and is a great way to get in your veggies.

For my version of the stir-fry, carrots and broccoli were the vegetables of choice, but you could also add in bok choy or any other vegetables you want. Adding in seasonings such as onions are perfect because they become so soft and delicious when cooked that they add their own meat-iness to the meal. Don’t be afraid to tweak this to your family’s liking and make it again and again!

Tofu Stir-Fry with Honey Sriracha Asian Sauce

Ingredients

Instructions

In a pot over medium high heat, add 1 tablespoon coconut oil.

Add onions and carrots in the pan, and swirl, sautéing for about 2-3 minutes to soften them (they take longer than the other vegetables).

Add broccoli and tofu, and sauté all for 5 minutes, stirring frequently. Add salt and pepper to taste.

Add the Honey Sriracha Asian Sauce and cook together for 2 minutes on medium heat. S.erve over rice or alone and enjoy

Whisk all the ingredients together.
