If you’ve ever been to a Thai restaurant, you’re probably very well aware of this soup they call Tom Yum Gai. “Tom Yum” is the name of the soup that originated from Laos and Thailand, and “Gai” means chicken. Tom Yum is also typically made with prawns, which is called Tom Yum Goong. Since we didn’t have any prawns on hand, we used chicken. Other distinct characteristics of this soup is that it’s made with very unique ingredients – such as galangal (a very earthy and citrusy root), lemongrass, kaffir lime leaves, and fish sauce. It may sound like a very weird combination of flavors, but somehow it incorporates nicely!

,%20lemongrass,%20kaffir%20lime%20leaves,%20and%20fish%20sauce.%20It%20may%20sound%20like%20a%20very%20weird%20combination%20of%20flavors,%20but%20somehow%20it%20incorporates%20nicely!%3C/p%3E%3Cp%3EWith%20a%20very%20rainy%20weekend%20ahead%20of%20us,%20it%20is%20absolutely%20necessary%20to%20make%20this%20soup.%20We%20made%20it%20last%20night%20for%20the%20first%20time%20and%20were%20quite%20impressed%20with%20the%20turn-out!%20We%20added%20our%20own%20additional%20fresh%20ingredients%20to%20make%20this%20a%20very%20healthy%20and%20satisfying%20meal.%20When%20Thai%20people%20named%20this%20soup,%20they%20were%20right%20when%20they%20used%20the%20word%20%E2%80%9CYum%E2%80%9D%20in%20it.%3C/p%3E%3Cp%3EThis%20is%20the%20galangal%20root%20that%20is%20a%20%22must%22%20in%20this%20recipe.%20You%20can%20buy%20this%20root%20at%20your%20local%20Asian%20supermarket%20for%20like%20a%20dollar.%20This%20is%20a%20very%20hard%20root%20that%20looks%20like%20it%20resembles%20ginger,%20but%20there%20is%20no%20similarity%20in%20taste.%20For%20this%20recipe,%20we%20used%20a%202-inch%20root%20and%20sliced%20it%20into%20small%20pieces.%3C/p%3E%3Cp%3ETo%20prep%20the%20other%20ingredients,%20we%20used%20about%205%20cloves%20of%20garlic%20finely%20chopped,%203%20shallots%20chopped,%203%20small%20to%20medium%20Roma%20tomatoes%20(or%20any%20kind%20of%20tomatoes%20you%20have),%20and%205%20Kaffir%20lime%20leaves.%20Luckily%20we%20have%20a%20lime%20tree%20in%20the%20backyard%20so%20we%20just%20used%20that!%20The%20leaves%20should%20be%20cut%20in%20half%20and%20de-stemmed.%3C/p%3E%3Cp%3ETo%20start%20the%20broth,%20we%20used%2010%20cups%20of%20chicken%20broth%20and%20added%201/4%20cup%20of%20fish%20sauce%20to%20flavor%20it.%20To%20this,%20add%202%20or%203%20juiced%20limes%20(depending%20on%20how%20sour%20you%20like%20the%20soup).%20Add%20the%20sliced%20galangal,%20chopped%20lime%20leaves,%20minced%20garlic,%20chopped%20shallots,%20and%201%20fresh%20lemon%20grass%20stem%20cut%20into%20short%20lengths.%20We%20used%20our%20lemongrass%20in%20the%20garden,%20too.%20Yay!%20Anyway,%20bring%20this%20to%20a%20boil,%20then%20simmer%20for%20about%2020%20minutes.%3C/p%3E%3Cp%3EAfter%20the%20simmering%20process,%20we%20added%201%20lb.%20of%20bite-sized%20chicken%20pieces%20(you%20can%20use%20breasts%20or%20thighs).%20This%20goes%20in%20raw%20and%20it%20will%20cook%20in%20the%20soup.%20Next,%20we%20crushed%20about%207-10%20Thai%20chilis%20and%20threw%20it%20in%20the%20pot%20to%20get%20it%20nice%20and%20spicy.%20If%20you%20don't%20think%20crushing%20it%20will%20get%20it%20spicy,%20you%20can%20cut%20it%20in%20half%20and%20let%20some%20of%20the%20seeds%20seep%20out.%20Finally,%20we%20added%20the%20tomatoes,%201%20can%20of%20straw%20mushrooms,%20and%201%20can%20of%20baby%20corn.%20Let%20this%20return%20to%20a%20boil,%20then%20lower%20the%20heat%20and%20simmer%20until%20the%20chicken%20is%20cooked%20through,%20about%202%20minutes.%3C/p%3E%3Cp%3EAnd%20there%20you%20go!%20A%20nice%20hot%20bowl%20of%20Tom%20Yum%20Gai%20that%20is%20sour%20and%20spicy!%20Keep%20in%20mind%20that%20you%20are%20NOT%20supposed%20to%20eat%20the%20lime%20leaves,%20lemongrass,%20or%20the%20galangal.%20They%20are%20only%20used%20to%20flavor%20the%20soup%20-%20so%20don't%20try%20to%20eat%20them.%20This%20is%20much%20easier%20than%20we%20thought%20it%20would%20be,%20and%20we%20can%20now%20open%20a%20Thai%20restaurant.%20Just%20kidding.%3C/p%3E){kind=link}
