Ingredientes

  • 2 lemons, thinly sliced and seeded
  • 6 lbs. ripe tomatoes
  • 3 lbs. tart apples
  • 5 c. sugar
  • 1 c. seedless raisins
  • 1/2 teaspoon salt
  • 1/4 c. minced candied or possibly preserved ginger
  • 1 c. roughly minced walnuts (about 1/4 pound shelled)

Direcciones

  1. Place lemon slices in small saucepan and cover with cool water. Bring to a boil and simmer till very tender. Drain off 1 c. of the liquid and place with the rind in a large kettle. Peel tomatoes; cut in large pcs and add in to kettle. Wash, peel, and core apples. Cut into 3/4 inch cubes and put in kettle. Add in sugar, raisins, and salt. Cook and stir over moderate heat till the sugar dissolves. Simmer, stirring often, till mix thickens and fruit is translucent/soft. Stir in ginger and walnuts. Remove from heat and ladle into warm sterilized glasses and seal immediately.
  2. Makes about 8 (8 oz) glasses.
