Tomato, Basil and Olive Bruschetta

Ingredientes

  • 1 loaf crusty bread, sliced
  • 1 1/2 cups grape tomatoes, roughly chopped
  • 1/3 yellow onion, diced
  • 1/4 cup black olives, pitted and roughly chopped
  • 1 tbsp balsamic vinegar
  • 1/4 cup olive oil
  • 4 basil leaves, cut in a chiffonade
  • 1 tsp sea salt
  • 1 tsp ground black pepper
  • Olive oil for brushing

Direcciones

  1. Whisk together the balsamic vinegar, olive oil, basil, salt and pepper. Refrigerate for about 30 minutes.
  2. Preheat oven to 400°.
  3. In a mixing bowl, add tomatoes, onion, and olives and add the dressing, tossing to combine.
  4. Place the sliced bread pieces on a baking sheet lined with aluminum foil. Brush the tops of the bread with olive oil. Top with tomato mixture.
  5. Bake for about 5 minutes – or until starting to brown around the edges (you’ll see it on the onions too).
