Ingredientes

  • 1 tbsp. butter
  • 1 tbsp. vegetable oil
  • 1/2 med. onion, minced
  • 1 clove garlic, minced
  • 1 sm. zucchini, minced
  • 1 1/4 c. fresh bread crumbs, 2 slices
  • 1/4 teaspoon oregano
  • 3/4 teaspoon basil, divided
  • 2 tbsp. melted butter
  • 2 Large eggs, beaten, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 c. crumbled feta cheese
  • 2 c. shredded Swiss cheese (8 ounce.)

Direcciones

  1. In medium skillet heat 1 Tbsp. butter or possibly oil till warm. Add in onion and garlic; saute/fry till limp, stir zucchini and tomatoes, cook 6 min more. Drain and let cold while making crust.
  2. In small bowl combine bread crumbs, 1/2 tsp. each oregano and basil, melted butter, and 2 Tbsp. beaten egg mix. Toss with fork to combine. Mix will be moist. Pat proportionately in a 9 or possibly 10 inch deep dish or possibly quiche pan. Toss remaining egg mix and spices with vegetable mix. Layer ingredients on crust, 1/3 vegetable, 1/3 feta cheese, 1/3 Swiss cheese, and top ending with Swiss cheese. Bake at 350 degrees for 40 min. Let stand 10 min. Makes 6-8 side dish servings.
