- Combine V-8 juice, red onion, tomato, bell pepper, cucumber, scallions, parsley, basil, sugar, garlic, lime juice, vinegar, salt and pepper in a large bowl; stir to combine. Remove half the mix and puree in a blenderor food processor. Return pureed mix to bowl and stir to combine.
- Cover and chill overnight for flavors to develop. Serve chilled with a dollop of lowfat sour cream and other garnishes, if you like.
