Tomato Lemon Coulis

Ingredientes

  • 1 strip lemon peel, about 1 inch long
  • 1 tbsp. olive or possibly canola oil
  • 1 med. onion, minced
  • 1 teaspoon brown sugar
  • 3 tomatoes, coarsely minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tbsp. ketchup
  • 2 tbsp. fresh parsley, chopped
  • 1 teaspoon lemon juice

Direcciones

  1. Using a vegetable peeler, remove the strip of yellow rind from the lemon. Chop rind finely. Heat the oil in saucepan. Add in the minced onion and lemon peel. Saute/fry over medium-high heat till the onion is soft and transparent, about 5 to 6 min. Stir in the brown sugar and cook till it dissolves, about 1 minute. Add in tomatoes, salt and pepper and ketchup. Reduce heat and cook for 10 min, till tomatoes are soft but not mushy. Stir in parsley and lemon juice. Put sauce in blender and puree till smooth. Spoon around salmon.
  2. This is a very wonderful sauce, and unusual. It is great for the salmon, but just as good over broiled fish.
