%3C/p%3E%3Cp%3E2%20years%20ago,%20the%20beautiful%20summer%20of%202013%20we%20had%20a%20lovely%20and%20flourishing%3C/p%3E%3Cp%3Evegetable%20garden%20that%20my%20wonderful%20dad%20grew%20in%20our%20backyard%20%20and%20we%20had%20a%20bounty%3C/p%3E%3Cp%3Efull%20of%20vegetables%20for%20almost%20an%20entire%20year.%20Tomatoes%20grew%20like%20wild%20fire%20and%3C/p%3E%3Cp%3Ewe%20had%20so%20much%20that%20we%20had%20to%20infact%20give%20away%20so%20many%20bags%20of%20tomatoes%20to%20our%3C/p%3E%3Cp%3Eneighbors%20and%20friends.%20We%20ate%20the%20juicy%20red%20fruit%20raw%20in%20salads,%20made%20pickles,%3C/p%3E%3Cp%3Echutneys%20,%20masala%20curries%20and%20even%20froze%20a%20whole%20lot%20and%20still%20we%20had%20plenty%3C/p%3E%3Cp%3Emore.%3C/p%3E%3Cp%3EThis%20Tomato%20rice%20was%20one%20of%20the%20many%20dishes%20we%20made%20with%20our%3C/p%3E%3Cp%3E6-7%3C/p%3E%3Cp%3Elarge%20Red%20Tomatoes,%20chopped%3C/p%3E%3Cp%3E1%3C/p%3E%3Cp%3Elarge%20Red%20Onion,%20chopped%20finely%3C/p%3E%3Cp%3E4%3C/p%3E%3Cp%3EGreen%20Chillies,%20slit%20lengthwise%3C/p%3E%3Cp%3E1%3C/p%3E%3Cp%3Eslightly%20brown.%20Then%20add%20Cumin%20seeds,%20Dry%20red%20chillies%20and%20curry%20leaves.%3C/p%3E%3Cp%3E2.%20Add%3C/p%3E%3Cp%3Ethe%20Ginger%20garlic%20paste%20and%20saut%C3%A9%20for%20a%20minute.%20Add%20chopped%20red%20onions%20and%3C/p%3E%3Cp%3Egreen%20chillies.%20Add%20a%20pinch%20of%20salt%20and%20saut%C3%A9%20until%20the%20onions%20turn%20soft%20and%3C/p%3E%3Cp%3Epink.%3C/p%3E%3Cp%3E3.%20Add%3C/p%3E%3Cp%3Eturmeric%20powder,%20red%20chilli%20powder,%20garam%20masala%20and%20hing%20and%20mix%20well.%20Then%20add%20in%20the%3C/p%3E%3Cp%3Echopped%20tomatoes%20and%20cook%20until%20tomatoes%20are%20soft.%20Do%20not%20over%20cook.%3C/p%3E%3Cp%3E4.%3C/p%3E%3Cp%3EFinally%20add%20the%20Basmati%20rice,%20mix%20it%20well%20with%20the%20tomato-%20masala%20mix%20and%20then%3C/p%3E%3Cp%3Eadd%20water.%20Cook%20until%20the%20rice%20is%20cooked%20through.%20Garnish%20with%20some%20fresh%20coriander%20and%20mint%20leaves%20on%20top%20and%20serve%20hot.%3C/p%3E%3Cp%3EThis%20dish%20is%20definitely%20a%20one-pot%20meal%20and%20it's%20spicy,%20tangy%20and%20just%20wonderful.%20Just%20serve%20it%20with%20some%20cucumber%20raita%20and%20pappad%20and%20you%E2%80%99re%20done.%20Oh!%20Btw,%20we%20had%20it%20with%20chutta%20pappadam%20(not%20fried%20ones)%E2%80%A6I%20love%20chutta%20pappadam,%20just%20place%20the%20dried%20pappadam%20over%20a%20flame%20until%20it%20bubbles%20and%20curls%20up%20a%20bit.%20Don%E2%80%99t%20make%20it%20too%20charred%20though%E2%80%A6%20:-)%3C/p%3E){kind=link}
