- Use tomatoes from your own garden or from source you know are organic, that do no have wax or pesticides on them for mass production or shipping
- Best use up that pile of skins from canning day
- Save the skins and dry then out in oven or dehydrater
- In the oven:
- Lay out in silpat mat or parchment
- Lay out in single layer... Most important
- Use more than one sheet to prevent clumping or overlapping if you have a pile from canning
- Set in 200 oven or toaster oven for about 4hours. Remove from oven when papery but take care not to over dehydrate.... Retain color
- When they are dry like crunchy fall leaves.... Grind in side grinder
