Ingredientes

  • 12 x fresh plum tomatoes
  • 4 clv garlic peeled
  •     sea salt and freshly grnd black pepper
  • 6 Tbsp. minced fresh basil
  •     extra virgin olive oil

Direcciones

  1. Preheat the oven to 120C/250F/Gas 1/2.
  2. Slice the tomatoes in half lenethways and scoop out the seeds.
  3. Crush the garlic with a little salt to a smooth paste.
  4. Add in the basil and some black pepper.
  5. Spread this mix proportionately on the cut surfaces of the tomatoes.
  6. Place upright in a suitable ovenproof dish and pour in sufficient extra virgin olive oil to come one third of the way up the tomatoes.
  7. Cook in the preheated oven for 3 hrs or possibly longer.
  8. The result should be almost like sun dry tomatoes as they will shrivel as they cook.
  9. Check the extra virgin olive oil level occasionally.
  10. The longer the tomatoes cook the better.
  11. Serves 6
