%20there%20is%20a%20fair%20mixture%20of%20the%20different%20chefs.%20But%20something%20about%20Kevin's%20dishes%20have%20just%20drawn%20me%20to%20make%20them%20first.%3C/p%3E%3Cp%3EMaybe%20it's%20the%20apparent%20simplicity%20of%20Kevin's%20food%20that%20makes%20it%20seem%20like%20a%20good%20way%20to%20wade%20into%20Top%20Chef%20re-creationism.%3C/p%3E%3Cp%3EOr%20maybe%20it's%20the%20obvious%20comfort%20food%20aspect%20of%20Kevin's%20cooking.%20The%20stick-to-your-ribs%20ingredients%20and%20preparations%20are%20perfect%20for%20this%20time%20of%20the%20year.%3C/p%3E%3Cp%3EStill,%20maybe%20it's%20because%20when%20I%20start%20out%20to%20cook%20one%20of%20Kevin's%20dishes%20I%20recognize%20that%20my%20Mom%20would%20have%20loved%20it.%20The%20flavours%20are%20bold,%20but%20simple.%20The%20ingredients%20stand%20on%20their%20own.%20There's%20no%20completed%20technique%20or%20scientific%20component%20to%20cloud%20the%20experience%20of%20the%20food.%20It's%20just%20straightforward%20good%20cooking%20and%20a%20wonderful%20understanding%20of%20flavours%20and%20how%20to%20bring%20disparate%20components%20together%20on%20a%20plate.%3C/p%3E%3Cp%3EThe%20simplicity%20in%20Kevin's%20dishes%20is%20derived%20in%20part%20from%20his%20focus%20on%20local,%20sustainable%20and%20organic%20ingredients.%20This%20is%20another%20reason%20I'm%20drawn%20to%20his%20recipes.%3C/p%3E%3Cp%3EWhen%20you%20look%20at%20Kevin's%20food,%20at%20the%20same%20time%20thinking%20about%20his%20food%20philosophy,%20you%20can't%20help%20but%20realize%20the%20simple%20logic%20of%20a%20focus%20on%20the%20ingredients%20in%20your%20immediate%20environment.%3C/p%3E%3Cp%3E%22What%20grows%20together,%20goes%20together.%22%3C/p%3E%3Cp%3ELogic.%3C/p%3E%3Cp%3EKevin's%20food%20is%20harmonious.%20It%20is%20comfortable.%20Most%20importantly%20it%20is%20damn%20good.%3C/p%3E%3Cp%3EAnd%20that%20is%20in%20no%20small%20part%20due%20to%20his%20food%20philosophy.%3C/p%3E%3Cp%3EFor%20this%20week's%20Top%20Chef%20recipe%20I%20cooked%20one%20of%20Kevin's%20finale%20dishes;%20the%20one%20inspired%20by%20his%20mother.%20There%20was%20something%20about%20the%20decadence%20of%20cooking%20just%20the%20chicken%20skin%20for%20the%20dish%20(after%20so%20many%20years%20of%20eating%20skinless%20chicken%20breast%20I%20couldn't%20resist!)%20That%20and%20the%20squash%20puree%20that%20Tom%20Colicchio%20specifically%20complimented%20Kevin%20on%20totally%20called%20out%20to%20me.%3C/p%3E%3Cp%3E*%20I%20used%202%20small%20carnival%20squashes%20that%20I%20received%20in%20my%20Good%20Food%20Box.%20The%20taste%20is%20quite%20similar%20to%20butternut%20squash%20but%20milder.%3C/p%3E%3Cp%3EChicken%20Skin:%3C/p%3E%3Cp%3ERemove%20skin%20from%20chicken.%3C/p%3E%3Cp%3ERemove%20all%20fat%20from%20skin%20(should%20have%20only%20thin%20layer%20of%20skin%20remaining.)%3C/p%3E%3Cp%3EPlace%20in%20small%20bowl%20or%20ziploc%20bag%20and%20add%20salt,%20pepper,%20cayenne,%20sugar.%3C/p%3E%3Cp%3ERub%20mix%20all%20over%20skin.%3C/p%3E%3Cp%3ERefrigerate%20for%20at%20least%20one%20hour.%3C/p%3E%3Cp%3EBlot%20dry%20with%20paper%20towel.%3C/p%3E%3Cp%3EFry%20in%20oil%20at%20370%20degrees%20until%20golden%20brown.%3C/p%3E%3Cp%3EBreak%20into%20shards.%3C/p%3E%3Cp%3ESquash:%3C/p%3E%3Cp%3EWhile%20chicken%20skin%20is%20refrigerating:%3C/p%3E%3Cp%3ESaute%20onion%20and%20garlic%20in%20butter%20over%20medium%20heat%20until%20lightly%20caramelized.%3C/p%3E%3Cp%3EAdd%20diced%20squash%20to%20onions.%3C/p%3E%3Cp%3EReduce%20heat%20to%20low%20and%20simmer%20until%20squash%20in%20fully%20tender%20(about%2030%20mins.)%3C/p%3E%3Cp%3EAdd%20cream%20to%20squash%20mixture.%3C/p%3E%3Cp%3ETransfer%20squash%20to%20blender%20(or%20hand%20blend)%20on%20high.%3C/p%3E%3Cp%3ESeason%20with%20s&p%20and%20lemon%20juice%20to%20taste.%3C/p%3E%3Cp%3EPass%20through%20chinois.%3C/p%3E%3Cp%3EReserve%20mixture.%3C/p%3E%3Cp%3ETomatoes:%3C/p%3E%3Cp%3EScore%20tomatoes.%3C/p%3E%3Cp%3EBlanch%20them%20in%20boiling%20water%20and%20then%20shock%20in%20ice%20bath.%3C/p%3E%3Cp%3EPeel%20skins.%3C/p%3E%3Cp%3ESeason%20with%20s&p%20and%20olive%20oil.%3C/p%3E%3Cp%3ETo%20Serve:%3C/p%3E%3Cp%3ESpoon%20squash%20mixture%20onto%20bottom%20of%20plate.%3C/p%3E%3Cp%3ETop%20with%20tomatoes.%3C/p%3E%3Cp%3ESprinkle%20on%20chicken%20skin%20shards.%3C/p%3E%3Cp%3EI%20know%20Kevin%20wasn't%20totally%20on%20his%20game%20in%20the%20final%20challenge%20and%20I%20know%20that%20(obviously)%20it%20wasn't%20the%20favourite%20dish%20of%20the%20day.%20But%20it%20was%20still%20a%20damn%20good%20dish.%3C/p%3E%3Cp%3EFor%20me%20it%20was%20another%20experience%20of%20the%20whole%20being%20greater%20than%20the%20sum%20of%20the%20parts.%3C/p%3E%3Cp%3EOn%20it's%20own,%20the%20chicken%20skin%20was%20pretty%20salty%20for%20my%20taste%20and%20the%20tomatoes,%20well,%20I%20wasn't%20sure%20I%20understood%20their%20role%20at%20first.%20The%20squash,%20on%20the%20other%20hand%20I%20could%20eat%20anytime,%20anywhere,%20%20under%20just%20about%20any%20circumstance.%3C/p%3E%3Cp%3EA%20bite%20of%20all%20the%20components%20together%20though?%20Suddenly%20the%20chicken%20skin%20is%20refreshed%20by%20the%20tomato%20and%20balanced%20again%20with%20the%20earthy%20squash.%20The%20citrus%20of%20the%20squash%20cuts%20through%20the%20density%20of%20the%20chicken%20and%20adds%20brightness%20to%20the%20raw%20tomato.%3C/p%3E%3Cp%3EEach%20ingredient%20is%20most%20effective%20in%20bringing%20out%20the%20notes%20of%20the%20others.%3C/p%3E%3Cp%3EAnother%20Top%20Chef%20success!%3C/p%3E%3Cp%3EAny%20requests%20for%20next%20time?%20Dishes?%20Specific%20chefs?%3C/p%3E){kind=link}
