Ingredientes

  • 1 pkt Chicken Flavor Top Ramen
  • 2 c. boiling water
  • 1 2/3 c. cooked or possibly canned red, pinto or possibly pink beans, liquid removed
  • 1/2 c. low-fat mayonnaise
  • 1/4 c. green pepper, minced
  • 1/4 c. celery, minced
  • 1/4 c. carrots, minced
  • 1/4 c. green onion, minced
  • 2 Tbsp. sweet pickles, diced
  • 2 Tbsp. pine nuts, toasted
  •     Fresh spinach leaves
  •     Pickle wedges and carrot curls for garnish

Direcciones

  1. Remove flavor packets from package. Cook Top Ramen noodles in water for 3 min. Drain and cold. In medium-size mixing bowl, combine the cooked Top Ramen noodles with the beans, mayonnaise, green pepper, celery, carrots, green onion, pickles and pine nuts. Sprinkle the flavor packet over tossed mix and toss again. Cover and chill till well chilled. To serve, spoon mix onto spinach leaves and garnish.
