Tortellini Lasagna
Sometimes I like to fill up my pantry, I love to replace the old baking soda, clean the shelves and reorganize, putting all the labels facing out. And sometimes, I like to empty my pantry, and try to use up the odds and ends of things that have been shoved to the back or the things that I bought just because they were on sale (why do I continue to buy things that I know I will never use just because they are on sale??) This is one of those “clean out the pantry meals” that was worth sharing…
Tortellini Lasagna
INGREDIENTS:
- 1 package fresh tortellini
- 2 tablespoons olive oil
- 1/2 onion-chopped
- 2 cloves garlic-minced
- 1 1/2 pounds beef
- 1-28 ounce can crushed tomatoes
- 1 fresh mozzarella ball-sliced thin
- Parmesan cheese-grated
DIRECTIONS:
In a large sauce pan bring water up to a boil and boil the tortellini as directed. Meanwhile, preheat oven to 375 degrees. In a large skillet, heat oil to medium-high and saute the onions and garlic for 3-4 minutes. Add the beef and brown. Add the tomatoes and simmer for 20 minutes, stirring occasionally. Spray the bottom of a 9 x 13 baking dish with non-stick cooking spray. Add the cooked tortellini, pour the sauce over the top and layer with slices of mozzarella. Sprinkle with Parmesan cheese. Bake for 30-45 minutes or until the cheese is melted and the sauce is bubbling.
**PS: I added 1/2 package of frozen spinach, thawed and drained to up the nutritional value. SHHHH, don’t tell the boys!!
