Tortellini Lentil Soup
- 2 lbs Brats or Italian Sausage, casing removed
- 1 T olive oil
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 1 green pepper, chopped
- 1 hot banana pepper, chopped
- 4 ribs celery, chopped
- 4 carrots, peeled and sliced
- juice from 2 lemons
- 2 ears corn, remove kernels or 1/2 c frozen corn
- 1 c lentils
- 2 T pizza seasoning
- salt and pepper to taste, about 1 t each
- 2- 32 oz. cartons beef broth
- 2- 32 oz cartons water
- 1- 28 oz c diced tomatoes
- 1-15 oz pkg cheese tortellini, or tortellini of your choice
- Parmesan cheese
- Garlic bread
In Dutch oven or large soup pot, in hot oil brown sausage, garlic, onion, peppers, celery, and carrots until sausage is browned. Drain.
Add; juice from lemons, corn kernels, lentils, pizza seasoning, salt, pepper, beef broth, water, and tomatoes. Bring to a boil; reduce heat; cover and simmer for 1 hour. Add tortellini; simmer 5-10 mins. Serve with Parmesan cheese and Garlic Bread.
