Tortilla Soup
I love soup!!!
- 1-1/2 pounds ground beef
- 1/2 cup water
- 1 envelope taco seasoning mix
- 1/4 cup chopped onion
- 1/4 cup chopped green pepper
- 1 can (32 oz) V8 Juice
- 2 cans (15 oz each) beef broth
- 1 jar (16 oz) salsa
- 1 can (16 oz) kidney beans, rinsed and drained
- 1 can (15 oz) black beans, rinsed and drained
- 1 package ( 10 oz) frozen corn, thawed
- 1 cup cooked brown rice
In a large skillet cook onion, green pepper and ground beef until beef is no longer pink. Drain. Add water and taco seasoning mix. Simmer 10 minutes. Transfer to a slow cooker. Add V8 juice, beef broth, salsa, beans, corn and brown rice. Mix well. Cover and cook on low for 3-4 hours or until heated through.
Serve with corn chips, shredded cheddar cheese and sour cream.
