Ingredientes

  • 4 x 8 ounce Filets, 2" thick
  • 4 slc Bacon, Thick
  • 4 slc Swiss Cheese
  • 4 ounce Prosciutto
  • 2 Tbsp. Clarified Butter
  • 1/2 c. Bearnaise Sauce

Direcciones

  1. Preheat the broiler.
  2. Cut a slice in upper surface of each fillet, near the edge, to create a pocket.
  3. Stuff one slice of Swiss cheese and 1 ounce. of the Prosciutto into each pocket.
  4. Use a toothpick to secure the pocket closed.
  5. Wrap one slice of bacon around the edge of each fillet.
  6. Saute/fry on both sides in clarified butter till lightly browned.
  7. Place on a baking sheet and put in the broiler about 4" under the heat.
  8. Broil about 4 min per side.
  9. The fillets should be well browned on the outside but rare in the center and the cheese should be completely melted.
  10. The Bearnaise Sauce should either still be hot from preparation or possibly it should be gently warmed before using.
  11. Place fillets on warm dishes and pour a generous amount of Bearnaise sauce over each.
