Receta Trail Mix Oatmeal Cookies
The combination of currants, raisins, peanut butter chips and pepitas make these Trail Mix Oatmeal Cookies irresistibly chewy in the center and crispy on the edges.
Trail Mix Oatmeal Cookies

- 1 cup old-fashioned rolled oats (not quick-cooking)
- ¾ cup all-purpose flour
- ½ cup white whole wheat flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon fine sea salt
- ½ teaspoon ground cinnamon
- ¼ teaspoon nutmeg
- ¾ cup dark brown sugar
- ⅛ cup turbinado sugar (raw sugar)
- ⅓ cup unsalted butter, softened
- 1 teaspoon vanilla bean paste
- 1 egg, at room temperature
- 1 egg white, at room temperature
- ⅛ cup peanut butter chips
- ⅛ cup pepitas
- ⅛ cup currants
- ⅛ cup golden raisins
Place a rack in the center and upper third of the oven and preheat to 350 degrees F.
Line baking sheets with parchment paper and set aside.
In a medium bowl, whisk together the oats, all-purpose flour, whole wheat flour, baking powder, baking soda, salt, nutmeg and cinnamon. Set aside.
In a large mixing bowl, cream together the butter and sugars until light and fluffy (about 3 minutes).
Add the egg, egg white, scrape down the bowl, then add vanilla and beat again, just until combined.
Change speed to low and gradually add the flour mixture, until just incorporated. Do not overmix.
Add remaining ingredients.
Using a spatula combine the trail mix until nearly incorporated.
Scoop dough by ½ tablespoonfuls onto the cookie sheets 2 inches apart.
Bake for 9 minutes (cookies will appear underdone), then remove from the oven and allow to cool on the cookie sheet for 2 minutes.
Transfer to a wire rack to cool completely.

Last Friday was by far the most professional day I had at the office in a long time. A new manager, who wanted to get to know her staff better, invited us to lunch. I was the lucky one to get to choose the restaurant. I picked Vietnamese food because I am in love with Pho.
After an incredible bowl of Pho Ga, we walked out of the restaurant when I spotted a bakery. Look, I said, don’t those look really good. And before you know it, I was shoveling the best cookie I ever tasted. EVER. It was a Trail Mix cookie.
Because of that, all of you are going to be lucky too. I immediately went to the store for ingredients to make Trail Mix Oatmeal cookies. Almost as good as the bakery. With less sugar and butter, of course. So by no means is there any kind of comparison, but at least I feel less guilty eating one of these than I did after I gobbled down the one I ate on Friday.
